    Instead of heavy cream, I use full fat coconut milk and it's still delicious. If I have any Parmesan rinds in the freezer, I'll add it to the soup before pressure cooking.

    I have made it in a Dutch oven. I’m not sure the pressure cooker is easier. I used 2 kinds of sausage, ground and Italian smoked cut up. Yes you want to brown the sausage first. I didn’t use beans but it’s a good idea. I also used spinach because that’s what I had. Like you I haven’t had it elsewhere but I really liked my version.

      I’ve made it in both the instant pot and on the stove and it’s no easier in the instant pot, just cooks in 6 minutes instead of 20. I wouldn’t make it without browning the sausage.

      The only reason I think it's easier in the pressure cooker is that I don't have to cut the potatoes and onions up until after cooking and that saves time in my opinion and I don't have to pay any attention to it while it's cooking. I'm sure it's delicious in a Dutch oven, but if you use dry beans, you have to make sure they always have enough liquid as they are cooking and I like to set the pressure cooker and move on to other things.

      I also love the way the instant pot INFUSES flavors throughout the soup/stew mixture. Pressure cooking does that.

    Thanks for this! I have made the copy cat Olive Garden version many times and it’s delicious. I love the idea of putting in the onions and potatoes whole and can’t wait to try it! I also love how excited you were about the sausage. 😄

    I've done a copycat of this soup for years because it is one of my favorite things from there. Olive garden doesn't use beans in this soup and they slice the russets into rounds, but this looks delicious and I think I'll be giving this a try, but with kale.

    I've never tried it, but it sure looks fantastic! Sometimes I buy tiny yukon gold potatoes, so might try adding them later, and keeping them whole. I love these types of recipes👍😊

    For parmesan cheese I have been using a style called 'petals'. They are pre-shaved and are a bit cheaper than the block of cheese. I really like how they melt and give a fresher taste than the grated cheese.

    Sounds Good! I've had the Olive Garden version, and it was good. However, I would have to do some major tweaking since I don't eat pork now. I can't imagine a chicken sausage would compare, but maybe it would. I might just try it without meat, and add more seasoning. Thanks for the idea!

      I think it would be great with chicken sausage or even just cubed chicken pieces. The only change I would make is to add more seasonings since the sausage helps to season the soup.

    The Onion Skins have nutrional value.
    I put an entire Clove of Garlic with Skin and Onion with Skin in my Soups.

    Love your ninja foodi recipes!! When you upgrade to new versions, please be sure to not leave behind those of us who are not going to be given free upgrade machines!!

      Just so you know I don't get free upgrades. I have purchased all of my appliances myself. The two styles of Foodis (one lid and two lid) work pretty much the same with the exception of the extra functions on the two lid models. So, the recipes are the same. I test them in both styles and if there are any differences, I will be sure to include that in the written recipe and in the video. I still use my two lid model a lot and love it, so no one is being left behind.

    Skipping the pressure cooker next time and going to the crock pot. Took several rounds of pressure cooking 5 minutes at a time, for the beans to soften. I've got a wholelotta mush now. Great flavor though.

      I'm a little confused because the initial PC time is 25 minutes. Your beans should have been perfectly cooked in that time frame. What beans did you use?

      @TheSaltedPepper Great Northern. I did the initial 25. They were half cooked. I did another 5, then another 5. The next 5 was too much. Hope there isn't something wrong with my foodi.
      My husband asked me to put it on the rotation because the flavor was so good.

      @@dehnadykeman3614 That is odd that they weren't cooked. I have heard that older beans sometimes stay hard longer and we don't always know if they are old when we buy them. I haven't had that experience and mine were always done in 25 minutes of PC time. Another option to try is to soak the beans overnight and then add them to the soup and PC for 25 minutes. They definitely should be soft by then. I'm glad you enjoyed the flavor and I sure hope we can get the beans to also work in the PC because it's so easy!

      @TheSaltedPepper To test things, I made this week's black beans in the foodi today. Submerged in broth and using your carne asada spice mix, (because, frankly, it's the bomb diggity!). Took 40 minutes high pressure with 10 minute natural release. Most of the recipes I read said 35/5. Must be something wrong with my foodi.

    I’ve never had it either. They tend to be skimpy with the ingredients they serve to customers at least in Duluth. I ordered the gnocchi soup and there were 3 gnocchi in the soup and very little else. Then again, we all know Olive Garden doesn’t serve REAL Italian food. It can be tasty, but…..good substitute for kale or spinach is endive which I generally use pretty much all the time.

      only if you used canned beans, otherwise the potatoes and onions would dissolve in 25 minutes of PC time.
