    I had pakora as part of a sampler appetizer at a local indian restaurant it was made superbly well, it was so crispy and they paired it with a delicious red tomato and onion herb sauce whatever the sauce exactly was it may be a secret of the restaurant actually because i liked the sauce so much that i asked them what it was made of, they gave me the impression that most of their of drinks and sauces are made in-house as i also ordered a delicious mango lassi that tasted like fresh mango

    In india we traditionally don't have "courses".. so .pakoda is not any starter,pakoda just can be had as evening snack..or with lunch or dinner with rice or wheat chapati along with other accompaniments

      l agree...I prefer my pakoras to be much smaller; and l was instructed a cooking class not to compact them before frying; that they should be somewhat loose for more uniform cooking

      always use vegetable oil or sunflower or peanut

      Fry in any vegetable oil with the highest smoke point corn, canola or sunflower

    Good. It will be better if the measurements are given for each ingredient. Also it will useful ,if you mention measurement of input versures wt of out put(pakora).

    Soaking the potatoes in water is totally unnecessary. Just add extra water after you've added the flour to the mix if needed. Sifting the flour is also unnecessary.
