i saw some other recipes shallow frying the cauliflower that was covered in flour first and was wondering if it was worth doing?

@@SchoolofWok I made it Chris, sadly I messed up. Over blanched the cauliflower first, I only have an electric hob which meant that the sauce didn't cook down and thicken up and the soggy cauliflower didn't get charred bits. Next time I'll ensure I keep my eye on the first stage and put it in the frying pan for longer, reduce down the sauce a bit in another pan then add at the end I think. The flavour though was amazing. Might even do it this week 🙂👍

Is there a rule of thumb about when to thicken a sauce with starch vs leaving it looser like this one?
It’s personal preference! You can thicken it if you prefer - Chris
Looks delicious. I want to make this for the kids to eat however need to dial down the heat to just a hint. Should I put in fewer chilli flakes or is the sriracha sauce the hottest component?

No. No. No. That skin is the best bit and needs to dry out and crisp up. Illegal levels of real butter and then your filling of choice. It's a treat, not something you have often, so healthy doesn't come into it.
