Vegetable Pakora | The Best Spinach & Potato Pakora Recipe

  • I love Pakoras especially when they are crispy and crunchy, and when I take my first bite and they are super soft and fluffy on the inside. Pakoras are not only eaten on special occasions, but can be enjoyed any time of the day and my perfectly spiced Spinach & Potato Pakoras are a wonderful accompaniment to a hot cup of chai, or as a starter for a nice meal for guests.
    Make these to enjoy with family and friends, during a meal, as a snack, or as a festive feast served up during the month of Ramadan, these will go down a treat.
    See below how I make mine
    ========================================================
    Prep time -10 mins
    Cooking - 20-30mins
    Makes approx. 40-48 depending on size
    Ingredients:
    2 mugs of Gram flour (500g)
    150g baby spinach roughly chopped
    2 medium potatoes, peeled and sliced like chips
    1 medium white onion finely sliced
    2 tablespoons yoghurt
    water in a jug
    1 teaspoon of:
    salt
    chilli powder
    coriander powder
    garam masala
    dried chilli flakes and fenugreek leaves
    1/2 teaspoon turmeric powder
    1 heaped tablespoon of:
    cumin seeds and coriander seeds coarsely crushed

    I just tried making using your method and they turned as good as you said they would. Lovely in the middle and crispy on out. I made small batch and they were loved so much they were finished in 10 minutes. I always look at recipes for all types of food on here and TikTok but my results never as I wanted but I was pleasantly surprised this time. Nice detailed and clear tutorial, thank you

    I make same way but I add fresh tomatoes/half tea spoon chat masala also ¼ teaspoon of whole carom seeds(Ajwain/اجوائن) and my pakoras r popular in my family. Same crispy and soft too 😋

      Hi Paul, thanks for your comment & for subscribing! I buy really heavy based pots to cook in from wherever I can find them if I'm honest. Tkmax & Homesense is were most of them are from as I've a ceramic hob so need special ones that can work on my hob. Try the above two stores and see what you can find! 😊

      Hi Tazeem, thank you for your comment. Great to hear this was well recieved. You can but please be aware the mixture does become runny. Which may cause difficulty when coming to fry the pakoras. You can prep the veg etc and place the dry ingredients into the besan the night before and then mix it up before you fry. I don't recommend mixing it up and placing the wet batter in the fridge.

    Could you freeze the mixture and defrost and make the pakoras another day? Or would that ruin the mixture?

    I've always struggled w/ Pakora recipes that tell you to just add all the veg in a bowl and THEN add the basan and spices and water and mix the whole thing up. Making a batter and THEN adding the veg seems like a genius hack. I'll be doing mine this way from now.

      No, besen is also known as gram flour, and is made from chickpeas.

    I used to work for an Indian family run leisurewear company in the Midlands many years ago. Every so often a big box of samosas and pakoras would appear in the kitchen. I was told they were left over from a wedding or some other celebration, but I suppose they could've been specially bought for the staff as well. I'd be back and forth from my work station to the kitchen getting some for me and the bloke I worked with😆 Just so moorish. Great times, the ladies in the sewing room just loved me as I was learning punabi off them, they'd be laughing. I started work there 'paatala' but ended up leaving 'mutta'.
    Took me years to burn off that food! 🤣
    Can this be made with plain flour?

      Loved reading this!! Im afraid that is exactly what happens when you develop a love for desi food. 😊👍 No as the gram flour batter is what makes the pakore and cannot be achieved with plain flour.

    I tried these but as additional I added..fried onions that you can buy in a packet ...... they did turn out more crunchy then I anticipated.....

      yes the fried onions would probably over cook a little, I've not tried that though.

    Besides the cumin seeds and coriander seeds, no spices are needed (besides salt and bit of red chilli poweder), try it! it's more tasty.

      Hi, the yoghurt gives a nice soft fluffy texture inside whilst the outside is nice and crispy.

    Don’t some people add baking soda (sodium bicarbonate) for fluffiness.

      Hi Majestic, thank you for your comment. Yes you are correct. They do but what I feel is that even though the pakoras are soft and fluffy they don't turn crispy on the outside. Also they seem to brown very quickly and turn dark in colour as opposed to the ones were you add yoghurt.

      Paul, you may leave the spinach out and just make them, they'll still absolutely delicious.

      You oil is too hot. Get it hot, add your pakoras in and after adding maybe 3/4 lower your heat setting to medium. Add the remaining batch and allow to cook on meduin until they have held their shape. Then turn the heat on medium high and cook until nice and crispy. The key is to keep them moving in the hot oil after they've held their shape of course.

      You can cut them however you like. I just like them cut like that as it shapes the pakora nicely.
