- Join me for a few days in my kitchen filled with food preservation as I get some of the garden harvest preserved through pressure canning, water bath canning, freezing & dehydrating. Thank you for your support!
Canning Green Beans:

Spicy Asian Plum Sauce:
4lbs plums
1 1/2 c brown sugar
1/2 c rice vinegar or apple cider vinegar
1/4 c soy sauce
1 tsp fresh ginger
1 medium onion
3 cloves garlic
1 tsp salt
1 tsp crushed red pepper
1/2 tsp fennel seeds
1/2 tsp black pepper
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground red pepper
1/8 tsp ground cloves
2 star anise
*I omitted the fresh ginger, fennel, cinnamon, ground red pepper, cloves and star anise I increased the ground ginger to 4 tsp and added 4 tsp chili flakes.
Fill pint jars to 1/4 inch headspace. Process 10 mins in a waterbath canner, adjusting processing time for elevation if needed.

It all looks so good. Great job! I love cabbage and cabbage steaks are a favorite of mine. I don't blanche cabbage either. My family enjoys stuffed cabbage rolls, so I freeze a lot of that and let the kids divide it up to take home. I would love to see how you use your plums and also hopefully you will show us how you use all the food you have preserved this fall, winter and spring. I need new inspiration and ideas. As a Muslim and a self researcher, I suggest that we should eat fresh as much as possible to get more nutrition. We should change daily task type and save time without being in rush so that we can focus on more important deeds. We should balance our faith and daily tasks. May Allah help us achieving our dreams as a loyal believer more than we could ever imagine. Dear Allah make us more consistent in what we should do. 🤲🏻
I very much enjoy your videos! I've started to can again after 35 yrs, but since my Mom passed, I don't have anyone to ask about canning. These videos are great!! Question: how do you know how long it takes for a recipe?! I get frustrated at myself that I have all these plans to do....and at 7pm am pooped and can't do any more but my planned projects are not complete. Big sigh. Time budgeting advice would be helpful. Thank you so much! If I’ve got a big canning day planned I really try to prep the night before if I can or at least read through the recipes. That way I have a bit of an idea as to how long everything will take. I just estimate and then budget for more time. I feel you. I’m really trying to be better about not overburdening myself with projects, especially into the evening. I appreciate your support!
I canned 30 pints of yellow beans the first week in August from my garden.

And how do you manage to stay so clean while you can? I aways end up looking pretty rough when I get done (and so does my kitchen for that matter 😂)
Hi Stacey! I’m lucky that my job allows me to work from home. I’m typically trying to get my preserving done after work or on the weekends. This time of year kicks my butt 🤣 how I manage to keep clean in these videos is an actual miracle. I am a mess and so is my kitchen. Somehow me spilling all over myself doesn’t seem to happen in my videos.
@@abbeyverigin I don’t even try to wear decent clothes when I can. It’s bad😂 And I use soooo many dish towels that when our regular ones start to show wear I replace them but the worn ones go right to the canning cabinet for spills and such. But it’s so fun!!😃😃

How do you plan to use the plum sauce? It looks delicious.
I’m thinking mixed with a bit more rice vinegar to create a marinade for chicken or in stir fry.
I may have missed it in the video, but what do you use the spicy plum sauce for?
I think I forgot to mention it. We will use it in marinades or stir fry :)
Hi there, I prefer to use the leafy part of the celery for my celery salt. That way I can use the stems for soups and casseroles and fresh eating, but don't let the rest of it go to waste. Also what is the variety of plums you had, please? ❤
Hi Deidre! I like to use the leaves for celery salt as well or I dehydrate them to use in soups. We have Italian plums or prune plums. We have another variety as well that I’m not sure the name of. Thank you for watching!
For what do you use the Asian Plum Sauce ?
We will mostly use it in marinades or stir fry :)

In asian dishes. In marinades, stir fry’s etc

are we using 4 pounds pitted plums or 4 pounds already pitted. OK the pits are tiny and not very significant I guess

@@abbeyverigin It's good! I used rice vinegar and IDK... I really can taste it. I compared apple cider with the rice and felt the rice was milder. I even wondered if I added too much. I did add more sugar.
I might use less vinegar next time and perhaps freeze it. Wish they'd invent something that would acidify with zero taste for canning sometimes.
