One of my FAVORITE Forms of Food Preservation | Preserving the Harvest | Homestead Pantry

  • We preserve a variety of ways - waterbath canning, pressure canning, freezing, fermenting, and dehydrating. Dehydrating is one of my favorite ways to preserve the harvest as it is very hands off and requires little prep. With fruit in particular, dehydrating is a way to preserve without all the additional sugar that canning recipes often come with. It is another method of food preservation that creates a shelf stable product, so you don't need to worry about freezer space or losing your harvest if your freezer loses power or is left open. We're stocking the pantry by dehydrating herb salt, fruit leather, and a variety of herbs and vegetables in today's video.
    Herb Salt 115 F 4 hours-6 hours
    Herbs 115 F 4-6 hours
    Yarrow 115 F 4-6 hours
    Celery 125 F 6-8 hours
    Zucchini 125 F 6-8 hours
    Cucumber 125 F 6-8 hours
Fruit Leather 145 F 6-8 hours (always closer to 8 for me)
    Kale 125 F 4-6 hours

So nice to find a channel that isn’t pushing freeze drying. It’s fine, and many of them got theirs free as an affiliate company, but I don’t have a huge garden or they kind of money to invest. Thank you for the dehydration method vlog. Love it, ❤️

"Preserving the Harvest" would be a good name for your channel.

Thank you for a video about dehydrating. So many YT creators have freeze driers now, there is rarely a video on dehydrating your harvest, and it's one of my favorite preservation methods. Yours all turned out great! Really enjoyed this. Thanks again and have a great weekend! It's going to be a hot one around here.

Zucchini Relish is a great canning recipe, we use on hot dogs, but also mixed with mayonnaise makes a great tarter sauce for fish tacos.

Loved this! I was excited to see some dehydration ideas! Before this video even ended, I went to the garden and picked parsley, basil and sage and made the herb salt. Wow! What an aroma! So nice! I sent a pic to my daughter wishing I could also text her the smell! 😅 I am also a fan of mint tea so I also picked some mint and lemon balm to make my own. Thank you for not freeze drying anything!! ❤

Just recently heard of some people making cucumber chips in their dehydrator. Thought of giving that a try. Love your channel.

I also use extra zucchini into cake/breads that we freeze, love how moist it makes cakes.

    Terrific video! Thank you!

Thanks, love to dehydrate as I cannot afford a freeze drier. I use a salad spinner on my herbs to get out the extra water...also the celery tops.

I made fruit leather last year when I had a lot of fruit that needed to be used.

I have a sort of bakers rack so I lay paper towels on the racks and lay my herbs out on them. It only takes a few days for them to be completely dry. That way I can use my dehydrator for other things. Lemon Balm tea is my absolute favorite tea

I was recently inspired by your channel to try pressure canning meals in a jar. We’ve found them so convenient that I looked for more. You might be interested in the book “Pressure Canning for Beginners and Beyond” by Angi Schneider there are some more meals in a jar recipes and another hummus recipe!

Hello Abbey, the herb salt is a delicious color; i have some ideas for its use. Could the zucchini be rehydrated and used in zucchini bread; it would be fantastic when the snow flys.

QUESTION: Will dehydrating a variety of things at once (in one macine) affect the flavor? Will did mint or onion over-take the rest?

Do you ever get “cross contamination” of flavors when having multiple types of things in the dehydrator at once? I’m still pretty new to food preservation, so I haven’t been brave enough to combine things, but I also hate running it without every tray full. The exception was when I did green onions, ginger, and garlic together, but that was all going into a chili oil mix I was making anyway. I have dehydrated cucumber that I am excited to try in tzatziki mix too! I still need to do dill, shallot, and mint.

Hello Abbey, could you show a good method to can hot banana peppers for the long term, my family would USA vinegar, salt, sugar, water, and a clove of garlic in the jar. I lost the recipe. Thank you for all you do.
