I've always wanted to like the taste of sweet potatoes more than I do, and recently I discovered purple sweet potatoes and that sealed the deal! So good, and so pretty too.
Several years ago, I learned that vitamin A is more bioavailable when paired with unsaturated fat. So I had the idea to mash roasted sweet potatoes together with avocados. I like to put fresh thyme into the mash. The sweet potato can be roasted ahead, but I only combine as much as needed at the time since the avocado will turn brown and watery (especially if it's reheated). Beets go perfectly with this. I cube them small and cook them in the oven at the same time as the sweet potatoes. I don't oil the beets, I cover them so they don't dry out during the long roast. I like to serve a blend of brown and wild rice, which I prefer to mix together with the beets on my plate. I'd usually have a kale salad along with all this, as well as something like tofu or tempeh. Also, I've recently started making a stew in the style of beef stew that includes mushrooms and lentils. I've been thinking about writing a cookbook. I've always been a writer and a cook, so I don't have a good excuse not to do it. I'm feeling inspired by you and other creators. It's fantastic the way you just went for it! Have you tried growing your own sweet potatoes? This year was my first year and I had pretty good success. I'm hoping to knock it out of the ballpark next year. Beets and carrots are easy to grow and I have successfully done so for the past two or three years. Nothing beats homegrown!! You can freshen up slightly wilted beet root leaves by cutting them and putting them in a glas of water like flowers in a vase. They'll suck up water and be much more crisp and firm.
I love to roast a giant pan of root vegetables and other veg in the oven. I use sweet potatoes, beets, red onions, carrots, radishes, cauliflowers, broccoli, and even sweet peppers if I have them. Makes for a delicious and flavorful addition to so many meals.

Thanks If you wash and you bake whole beets in the oven and cover for a hour After peel beets , shreds and ad apple cider vinegar, balsamic vinegar salt and chopped garlic Phenomenal salad and can stay in your fridge couple days
I like to cook lentils in my pressure cooker with garlic, and then immersion blend them at the end. Then later whenever I'm having vegetable soup, I take the lent8ls out and scoop a half cup into the soup and stir. It makes creamy soup with even more nutrients. And they are dirt cheap when you buy dry.

@@SweetPotatoSoul It is easy. You can even eat leaves! One planted organic sweet potato can provide tons. I love the orange sweet potatoes but those Japanese ones are really good.
I'm confused. I've been a vegan for twenty plus years. I don't keep a very good diet, but I try to keep up with the latest scientific discoveries concerning food and nutrition. I just read an article, where a nutritional expert warned about beet leaves. She said that they contain nitrates, and nitrates decreases blood's ability to absorb oxygen. So, which is it - do they oxygenate blood or do they in fact have the opposite effect? 🤷🤔

I’ve met several women who have gone vegan for awhile but they usually quit because they didn’t feel right. Why do you think that is? What mistakes do you think they made?
Good question. I think people struggle because they, 1.) Don't eat enough nutrient dense food. Too many processed carbs, and 2.) Don't eat enough in general. I haven't experienced that, honestly, and I'm sure everyone has a different situation. But for women who are becoming vegan it is crucial to eat mostly unprocessed nutrient dense foods, limit processed foods, eat a lot of plant-based protein (green veggies, lentils, beans, tofu, nuts, etc), and eat enough to feel nourished (forget standard American diet rules about portion control). Vegans have lower rates of all of the top killers, so there must be something to this way of living.
So far I like every food you named even though I am not a vegetarian.I like lentils but I like them in a soup.To me lentils taste better in soups.I don't like them in salad form.I tried it and I just like lentil soup much better.especially with potatoes,celery, onions and carrots in it.
I live in western Ireland, and the variety here is still so poor. The only mushrooms they have in most stores are white and cremini. Only one chain sells shitake and a pack of "exotic" mushrooms (these are mostly oyster with a couple shitake), and the shitakes and exotics are stupid expensive. The few Asian stores do have a slightly larger variety, as does the expensive, fancy specialty store, but the prices are even higher in those shops. I've never once seen a maitake or lion's mane anywhere. It kills me.
Be careful to down “simple carbs”-fruits are also simple carbs are our NATURAL FOODS as humans. See the book 80/10/10 Diet by Dr. Douglas Graham. Great channel!

Have you tried my beet black bean burgers? The earthy beet flavor is hidden pretty well by the spices.

One of my favorite soups is my lentil soup, it's on my blog. I eat it for breakfast! It's got all those things in it plus a splash of soy sauce :)

Beets are tasty, but if you're prone to forming oxalate kidney stones, you should eat them sparingly. (I found this out the hard way).
