    I love Eiswines and have drunk many German varieties. Now, thanks to Bruce, I'll be looking at Ontario vintages. I've always wondered what types of cocktails could be made with this. Thanks!

    Now that is a drink I can get behind. I will make one later today but with gin, think that will add that sparkle. Though the blue cheese and prosciutto with icewine is great.

    Combing some reasonably hot peppers seems like a brilliant idea because spicy and sweet take up the exact same places on your taste buds its part of why milk is so good at curing that mouth burning feel you get when you eat spicy

    Bruce your channel is outstanding!! What a fabulous primer on ice wine!! I am in BC and I count on the VQA label not only for superb legit ice wine - "the real thing!!" - but also fabulous regular wines. If you ever get to my neck of the woods in BC, come and travel through the lovely Okanagan in the summer. The wineries are mindblowingly gorgeous, many now have restaurants and B & B hotels, and it is just a damn amazing way to spend a few weeks in the warm summers. It gets pretty hot in the Okanagan. I love ice wine. I haven't had a lot of it but it is so delicious!! Cheers Bruce. I am up with insomnia and decided to have a nice G&T as I return emails and watch some good cocktail videos!!

      Thanks Christine! Yeah isn’t the real thing wonderful? I would love to get out to Okanagan and tour the region. On my bucket list! Ontario has some really nice wineries but I’m sure the surroundings don’t compare to the Okanagan Region.
      I know melatonin works to aid with insomnia. There’s also something out there called “dream water” don’t know much about that though. But yeah a G&T while watching videos could work also 😉

But hey, for now at least, once in awhile, if I am up late and can't sleep, a nice mild G & T, while watching some terrific TH-cam videos (you are my fave!!) helps to chill!! Bruce you will not be disappointed in the Okanagan region tour wineries for ice wine but also for some fabulous wine and cocktails. I have checked out some Ontario ice wine and it was lovely. A friend from Toronto and London and I all went together. To do the Okanagan you want to come in the summer. It is glorious and hot (I mean hot!!) in the summer so if that sounds too hot, maybe the spring!! But summer in the OK is gorgeous!! Cheers Bruce!!

    Never heard this wine before, I will give it a try. In Greece we make sun-dried wine and this fermentation creates a more viscus and sweet wine with even more flavours - close to caramel - that goes excellent with less sweet desserts (as you correctly say, just like icewine) and mainly with almond deserts. In Italy they also eat frozen grapes with grappa....Nice video.

    I must be living in the dark ages. I’ve never heard of icewine and have never really found a wine that was to my liking but I would definitely like to try this. Thanks Bruce for your great videos! Cheers!

      Not that dark. A lot of it honestly depends on where you live. True Icewine isn't as prevalent in a lot of places. It's definitely a lot sweeter that regular wine so if you try it, pair it with something salty maybe in case that first sip throws your tastebuds off the deep end.

      There are a lot of icewine varieties to explore. I hope you've got a hefty wallet. Ha. Chardonnay, Merlot, Cabernet Franc, Cabernet Sauvignon, Chenin Blanc, Pinot Noir, Pinot Gris, and Pinot Blanc are just some of the varietals that winemakers use in making icewine.
      Other commonly used grapes include Vidal, which is popular for its distinctive sweetness and its balancing high acidity. Gewürztraminer yields a harvest of lychee-scented grapes. Riesling has layers of peach, mandarin, and honey with a balanced tight acidity and a long finish. In short, white icewine retains the freshness of its base grape. You'll often find notes of flowers, candied citrus fruits, poached pear, pineapple, and honeydew melon balanced by refreshing acidity. Whereas red icewine has fruit flavours like strawberry, black cherries, raspberry, and some light spice. Happy exploring, Kersey. Let icewine be your dessert. Enjoy it on its own or pair it with fresh fruit or other sweet treats such as chocolate. Cheers!

    Oh yes, I too love Icewine, we have some here in Germany regularly, but they are veeeeery expensive. 🙄 But I discovered another thing: it's called 'Trockenbeerenauslese' (= dried grape selection). It's often times even sweeter as some Icewines and much much cheaper. It's NOT a fake Icewine, it's just another production method, using dried grapes. I don't know if there is such a thing in Canada or the US. 🤔 You should definately ask Ron next time, I'm sure he can tell you more about it. I now always go with Trockenbeerenauslese, it's really worth checking out! 👍 Full lovely flavour, sweetness and complex play of acidity, but at a much lower price. 🙂

      I found the availability of Trockenbeerenauslese where I live to be limited. I did find a couple of them at the liquor store that was out of my price range - $95. for a 2017 and $489. for a 2006. So, I guess I won't be trying it any time soon. Good suggestion asking Ron about it. Maybe he can acquire some of the grapes and make it for me. Cheers!

    So expensive though. Cheapest I can get locally is $30 for 375 ml. I'd rather spend $45--$55 for 500 ml Tokaji. But I suppose trying it once is something I might do.

    i love icewines. I bought a bottle of what I thought icewine a year ago, only to open it and realize it was instead a dry white. I was so disappointed.

      @@BarTalkCocktails Honestly, it was just okay. High acid which I like, but a bit more bitter than I prefer on the finish. It likely would have benefit from some decanting.

    Ya know normally i hate wine. Its always had a bitter taste that makes me retch and gives me a splitting migraine after just a swallow...but ice wine sounds right up my alley. I may need to pick up a bottle and try it. My problem has always been achohol with a lot of tannins make me ill. Maybe ice wine will be better?

      A lot of people don't like the tannins in wine, but as far as not feeling well after drinking it, some people are sensitive to the sulfites found in almost all wine. In general, dry reds will have the lowest amount of sulfites if you ever want to give them another try, like maybe a merlot for less tannins also.

      They are not protests. It is domestic terrorism designed to divide and hurt Canadian Citizens funded by radical groups in other counties. Just like Putin successfully divided and weakened the United States. The protest have nothing to do with Truckers as they are 90 percent vaccinated. The "Freedom" leaders are now in jail where they belong for taking away other peoples freedoms. NOT A PROTEST.
