    Those look delicious! Perfect for summer when it is hot and you want something delicious but don't want a salad.

    I used to make these all of the time, not sure why I stopped 🙃 those look delicious! I will definitely have to stop by my local Asian market sometime this week and make these!

      Hahaha, we kind of had the same experience! Q and I would make them frequently but stopped for a while! (Got sidetracked with all the other great food out there I guess. 😜😜) Those wrappers had actually been siting in my cupboard for a WHILE. LOL. Love how recipes come in and out of our life like that. Hope you enjoy revisiting an old fave! 🤗🤗

    Those spring or summer rolls look awesome Maddie 👌 and it's great that your father in law shares some of the crops from his garden but you should try growing your own. Your father in law would give advice regarding that. Love 🥰 this video and recipe and love💕❤💕❤ Maddie, Q and her father in law and mother in law.

      Thank you, David! It is great that he shares with us. I have learned a lot from him already. I *wish* we had the space to grow our own! Currently we don't have any backyard or patio so we are stuck with indoor growing. 😥 Q and I have been toying with the idea of indoor/vertical growing (on a very small scale) but have been looking at what we could do with our space. Any tips for that?? We'd love your expertise as well!
      We will (hopefully) be moving to a house with LAND one of these days and would absolutely love to have our own garden then... but OH MY that will be a learning curve for us! I always say I have a "red thumb" that's how bad I've been at growing things in the past. 😂😂 Thank you for your love & support! 🤗🌱💕

    Just made summer rolls today after being inspired by your video! Included the 3 fresh herbs, spring mix, cukes, carrots, scallions, mung bean sprouts, rice noodles, and baked tofu with 5 spice powder. All great! Made a peanut sauce with the Peanut Powder you introduced me to (found it with no salt or sugar on Amazon). Delicious!
    Here’s the not so good part. I only had the small (fresh corn tortilla size) rice paper wraps. It was quite a challenge to put even a small amount of all that good stuff into the wrap. Still really delicious but messy! 😋😅

      Oh yay! I'm so happy to hear that!! Well.. not that the wraps were too small. 😆🙈 Do you have access to larger ones? You can always do them as a salad on top of rice noodles instead... not quite the same, but you won't have to wrap anything that way. 😋😋 So glad you enjoyed though! 🤗🌱

I actually bought PB powder today for the first time as I've never seen it before in my local supermarket. Did make me chuckle when I saw you use it, kind of fortuitous 😂

      @@LetsEatPlants I made the dipping sauce using PB powder, I think though my soy sauce has a very strong taste so added an extra tbspn of maple syrup. Was delicious.
      Used it to pour over a stir fry of extremely leftover random ingredients! I didn't need to add any extra salt 💞

    Has anybody tried putting the peanut dipping sauce directly into the roll? I would like to make these for a group fishing trip, where we will hike a few miles into the wilderness. It would be inconvenient to haul several small containers of sauce for each person. I thought about making the sauce a little thicker, and putting it in the roll, probably among the noodles, so it does not make the other ingredients soggy. Any thoughts?

      I have not tried it! But... I do think you have the right idea to add it to the noodles. I would toss the noodles in peanut sauce so they are well-coated and then add them to the rolls like that. I think they should hold up ok! Just note the rice paper gets quite sticky when the rolls are packed tightly together, so it helps to have some parchment paper strips (or something similar) to help keep them separated. Enjoy! 🌱😊

      @@LetsEatPlants I tossed the sauce with the noodles, and it came out beautifully. I also wrapped a few extras in plastic wrap to test the shelf life, and they were just fine the next day.

      Oh yay!! I really want her to make it with me but she is sooo camera shy. She won't be convinced. 🙈🙈 Therefore I need to have her show me a few times before I share it. Definitely want to do the recipe justice! Will work on it to share! Thank you for letting me know you're interested. 🤗🤗

    I like your receipes, but I found that you speek toooooo much and your videos are toooo long. You should speak less or just at the beginning and just film the receipes. Thanks anyway
