I could make that without the rice, but then serve it up "properly" because we often have little frozen packs of rice made up ahead for him and it would be so easy to just add them to his bowls. Thought of it from seeing your lovely meal at the end.
I think any time you're working with an ingredient like uncooked rice or beans, it's good to count on that rice swelling up and taking up more space than when you started, so yes. An inch and a half of head space would be great!🌻
Oh, I love this. I made over a dozen ad ate every jar, by myself. Time to make more this year. Last year was taken with cancer and all that entails. This year, back to business.

Your peppers have indeed produced -- very happy plants. I grew some (from purchased plants) in my tiny garden and they also did a brilliant job. I'm sitting here trying to make peace with the fact that we just can't get it right all the time. I've done myself out of some of my beautiful chillie pepper harvest by dithering and leaving them in the fridge too long. If only I'd just chucked them in the freezer without overthinking it!
I have used rice in my home canned soups before. I cooked my rice about 15 minutes. So it was almost cooked. That way I knew how much rice there was going to be in the soup and that it wouldn't use up alot of my liquid in my soup. And I canned chicken and rice soup 2 years ago. And I'm still using it and the rice has held up really well. Didn't mush out. I think I have 16 different kinds of soup in my pantry that I have canned. I'm allergic to gluten and dairy and garlic. So I have to make my own soups. And it is so nice to have a lot to choose from. I might be trying this one. Probably will use less green peppers because I'm not a real fan. Might use a blend of the different peppers I grew this year. Nonapinos, red lipstick peppers, poblano peppers and a few shishito peppers. All are not spicy so should be good that way.
Sorry,it's been proven not to be safe to can with rice. It's not that it may hold up nicely, it's not worth the risk. Listen to top experts in this field,like Rose Red
Just made this on Thursday. I froze two quarts because that was all that was left over after dinner, lunch, and for my husbands lunch. I really liked this. It is a keeper.

I grew my Bell peppers from seed. They did amazing. I killed off my first batch of seedlings when we went away for a long weekend and forgot to water them before we left. 🥲. I started a backup batch fromDollar Tree seeds and they were the best thick blocky peppers I had ever grown! 77 peppers from 8 plants!! Your recipe looks awesome. I have tried many of your big batch recipes this year and they have been awesome!!
I use quite a few seeds from the dollar store. The only bummer is the past 2 years their Rutgers and beefsteak tomatoes were not what they were supposed to be. They were all these small salad type tomatoes. Too big for large cherry tomatoes but too small to be the ones pictured. Think like the campari types sold in the grocery store. Tasty to be sure bit not what I needed. I'll be ordering from baker creek for tomatoes this next season. But the peppers and herbs and onions and all the others-exactly what they were pictured to be. The peppers were really good this year

That would also extend the portions when serving if needed. I think ground chicken and turkey have a better texture after canning than beef does and I also prefer it.
I live urban so I buy chop up 2 each red, yellow, orange, and 4 green bell peppers. I freeze them and they last me about 3 months. I made a big jar of dehydrated mushroom powder and I have big boxes of sliced and whole mushrooms in the freezer. I now make my celery in powder too, and I always have these items to add when I am cooking. If you don't pre-prep these things they are the ones that slip away from you in the fridge. this way I always have them.
That looked good Rachel, Todd agreed so you did good. I think the starch in the uncooked rice is what made it siphon. Next time perhaps add the rice to the cooker and allow it to cook. I made my traditional stuffed pepper and stuffed cabbage soups last year on the stove, I just didn't cook it as long. I then canned them and they came out perfect. I also did, white bean and ham, black bean, and chicken soup. They all are awesome.

No idea if it still helps you, but we make balls from the meat&rice, and add it to the soup. Actually we stuff the peppers but we always have too much filling :).

I like the idea of this a lot not sure I would have done it the same way you did but looks really good. My mom used to make a deconstructed stuffed pepper casserole that she always called Spanish rice there was nothing Spanish about it no flavorings at all just salt and pepper. Matter of fact the recipe was 1 lb of hamburger one cup of rice 1 quart of canned tomatoes one onion one bell pepper bake in oven 350 for an hour. I may have done all the tomatoes onions peppers meat and flavoring and then made some of the dehydrated rice and put it in a jar on the shelf right next to it to just add as you used it. But what you have in those jars is basically what I make for Mom's Spanish rice casserole when I'm hungry for it sometimes these days I can of taco seasoning goes in sometimes some cayenne or I just make it plain and we shake on some hot sauce. It's filling it's good it's got good nutrients in it. Glad to see this one today
I made this soup in the restaurant, we would freeze it without the rice. Add the rice when you are ready to serve. The rice will break down overtime and the reheating process. This will also allow for reheats in the case of leftovers. Just a thought

looks amazing might be trying this and add beans instead of meat I am not a vegetarian I am just strange about ground meat and texture in my soup 🙂 I will go with the inch and a half of headspace rice expands when it cooks not much but enough to take up more room thank you for shareing
I made and canned this soup yesterday and it was amazing. Sprinkled some mozzarella cheese on top. I only did a inch and a half head space and only 1 tbsp of rice and it still siphoned for me as well.
Yes, Jackie. You should try you hand at canning. It's not as hard as you may think, but be careful. Once you start canning your own food and putting it away it gets addictive. You'll be looking for everything to can.😂
I made this soup and it is good, but I don't process rice or noodles with soups. I add them when I fix them to eat. The rice can be pre cooked and stored in freezer then add to the soup. Or eat the soup as it is I would be concerned if the jars with rice will stay sealed, or if they absorb all the liquid. Before adding rice , noodles, milk, to soups to pressure can, check safe guidelines first

I've now got 28 pints in the pantry plus a few "bonus" jars in the fridge. The smell of roasted garlic, onions & habaneros was stuck in my sinuses all day at work today. 🤣

I love your canning adventures If no one else has mentioned this and your going to try this recipe again I think ONE reason the powers at be do not recommend pressure canning things like rice was exactly what you exsperienced😮 I’d love for this to be a success maybe try stirring the contents once you’ve filled the jars maybe you won’t have the clumping of rice like I saw in your jar no clue Just a thought ABSOLUTELY NO CRITICISM WHATSOEVER 😊

Stuffed bell pepper soup is a favorite of mine. Used to get it at a local restaurant that had a fabulous soup/salad/baked potato bar! I've made it at home but I am a "throw in this-dash of that-pinch of that other stuff" cook lol. A friend told me that uncle bens rice doesn't fall apart in soup like some of the other types. Another soup I have eaten but haven't figured out how to make -ruben soup! It tastes like a Ruben sandwich! Even down to the rye bread flavor! One day ill figure it out. I use jasmine rice in my tomatoes soup recipes to give it the creamy mouth feel that the red label tomato soup has. Just toss about 1/4 of rice per 2 cups of tomatoes and veg. Cook until the rice just falls apart then blend. I've canned it too but of course pressure canned.
I love stuffed pepper soup! I make it all the time. I’m waiting on the last of my green tomatoes to ripen in the house then I’ll start canning those. I’m thinking some jars of this need to be put up though.
I don't remember what you said your roaster is but I found a GE at my local thrift store that is 18 quart. I bought it for $20 and it cam with the wire rack and the inserts and looked like it had never been used. Score for me!

I add grated carrots to up the sweetness so I don't have to use sugar. It adds a little different flavor, but I like it.

I canned some cabbage rolls, but not roll the cabbage was chopped. Rice turned to mush. But it tasted good. Hope your is delish.

Stuffed bell pepper soup is a favorite of mine. Used to get it at a local restaurant that had a fabulous soup/salad/baked potato bar!
I've made it at home but I am a "throw in this-dash of that-pinch of that other stuff" cook lol. A friend told me that uncle bens rice doesn't fall apart in soup like some of the other types.
Another soup I have eaten but haven't figured out how to make -ruben soup! It tastes like a Ruben sandwich! Even down to the rye bread flavor! One day ill figure it out.
I use jasmine rice in my tomatoes soup recipes to give it the creamy mouth feel that the red label tomato soup has.
Just toss about 1/4 of rice per 2 cups of tomatoes and veg. Cook until the rice just falls apart then blend. I've canned it too but of course pressure canned.

Regard head space: with the rice using up some liquid & expanding is 1" of head space enough? Just got to the end. 1 1/2" gotcha.

I love stuffed pepper soup! I make it all the time. I’m waiting on the last of my green tomatoes to ripen in the house then I’ll start canning those. I’m thinking some jars of this need to be put up though.

I don't remember what you said your roaster is but I found a GE at my local thrift store that is 18 quart. I bought it for $20 and it cam with the wire rack and the inserts and looked like it had never been used. Score for me!
I always like to use my potato masher to break up ground up meat when browning.
