- ARISI VADAM OR VATHAL RECIPE
CRISPY NITTU AND VILLA VADAM RECIPE
vadam pudu pacharisi 1 kg
sago or sabudana or javvarisi 200 grams
make a fine powder of rice and sago in a mill.
salt and spices as per requirement.
water should be 2 times of ground flour mixture plus 2 cups
measuring cups measurement
1 kg of maavu is 5 cups 200 G each
200 grams of sago is 1 cup (200 grams measure)
salt 35 grams (3/4th cup of 1/4 th of a cup) use only rock salt
green chillies 5 big for 1 kg of flour.
lemon big sized 2 for 1 kg of flour.
hing powder 1 tbsp for 1 kg of flour.
water is 2 times of flour that is
for 1 cup of flour add 2 cups of water.
for 2 cups of flour add 4 cups of water.
like that my patti has added 8 cups of flour ,she has added 16 cups of water,
method of doing the maavu
1) take twice the amount of water and heat it VERY well.,meanwhile take a mixie jar and add the required green chilies ,salt,and hing and 1/4th cup of water and make a fine paste out of it. when the water boils add in the ground mixture and mix it well.
2)then add in the flour to it and mix it well. your maavu is ready.
3) then cool the mixture completely {over night is preferable}
4) take small quantities of the prepared maavu and knead it very well. in the ancient days a mortar and pestle were used to knead the cooked flour to make it a lump free dough. in modern days we can use our hands or a modern equipment to complete this process.
5) divide small quantities of dough add take it to the terrace
6)then spread a plastic sheet or cooton cloth and make your desired vadam using different nozzles ,my grandma used villai achu and nittu achu.{ sengalipuram pithalai achu }
7) sun dry for 3 to 4 days and store it in container for more than 2 years.
8) fry and enjoy the vadams..
IMPORTANT TIPS,TRICKS AND PRECAUTIONS
see i have clearly illustrated the information regarding this recipe.
doubts may arise
let me clarify.
1) the selection of rice is very important. it should be vadam new pacharisi(raw rice) .
2) if you dont find vadam pacharisi you can use ration new rice for this purpose ,but the results are good but not excellent like vadam pacharisi,
which brand did my paati select?
taj mahal brand .you can go to the nearby shop and enquire about it.she got the 30 rs, 48 is also available.
3) do not buy old rice for this purpose.always select the new best rice.
4) javvarisi or sago or sabudana should also be new one and not old. the colour of the vadam will change,and will not look nice
5) green chilies and lemon depends upon the quantity of flour taken . the general advise by my grandma is that , add in lesser quantities of salt ,green chillies and lemon juice as prescribed. it will help your vadams to stay white in color after frying them.
6)before making the vadam, take 2 tsp of coconut oil and add in 5 tbsp of water and mix it well. this mixture can be used as an nonstick surface for plastic sheets. spray the mixture or sprinkle the mixture evenly on the sheets and spread the mixture evenly on all the nooks and corner of the sheets to avoid sticking of the vadam on the plastic sheet,.this procedure is mainly done to avoid plastic sheet sticking to the vadam . which is extremely dangerous.
so i have given all the tips and tricks. follow the recipe

Those days ... kindly reply.... also an idea shall we prepare in the night and dry them over night in a room and morning can I keep it in the sunlight? Please advice. Thankyou
Varnikha I think you have seen chitra Murali Kitchen, for putting the vadams over night them putting on sunlight. It may apply for koozh vadam or javarisi vadam and not for this for sure.
In those days both omum and green chillies and lemons were used and still popular.

Omum can be added while you add in the green chillies mixture.
It's so simple to melt asafodeita. Just slice green chillies and put it on the top of the asafodeita. Close it and check after 2 days¡
