I use a sharp paring knife running it down the vein of the leaf, job goes fast & I choose to tear my leaves brusing the leaves makes them tender also wash & soak them in water & white vinegar the acid starts breaking down enzymes making greens very tender. I do the same with KALE . LOVE YOUR Video

Alright. Second comment. So all of the comments below are about how good or “legit” this pot of greens look. I made these today for Easter Sunday. There was only one time that I made greens that I was EXTREMELY proud of. But this time. Y’all. I followed what Matt did in the video, I didn’t add the hot sauce though, and I only used smoked Turkey wings. Close to the end, I added some water because I thought it was too salty. HOWEVER, this was sooooo good. I mean BUSSIN! Lol! A friend of mine tasted the greens, then said: “WOW.” Lol! I’m from (and still reside) in Alabama, so I know GOOD collards. If you know Alabama, then you know collards taste completely different when you travel further south. This was THAT w/o the fatback. I’m throughly pleased. Thank you, Chef Matt for increasing my hope in cooking collard greens! Lol! Being from the south, cooking collards can be intimidating. But this time. Whew! I’m so grateful and can’t wait for my family to taste them too! 🙌🏾

Wow!!!! I haven't had collards in such a long time. My grandmother made them almost identical. She would keep the meat on the bones though. She would also drop some cornbread batter on top of the simmering collards and juice and make hush puppies. Damn!!!! Those were the best. Thanks so much for the upload. I think I will have some collards next weekend!!!

Looks good. Salt bacon and/or bacon grease will set it off for those not shy to pork. Also, a little (very little or to taste) Walkers Jerk Seasoning in the jar or a sliced jalapeño pepper to kick up the spice.
