I've tried a bunch of these. I think the best flour substitute I've found so far (in my subjective opinion) is unflavored whey protein powder like you'd find in the nutrition/vitamin aisle. It's just my preferred light crispy texture. I deep fry it in the proper southern tradition (in lard) and it's delicious. Plus lard is low in Omega 6s and has zero trans fat despite being much cheaper than something like olive or avocado oil.
You gotta watch them lard brands, partially hydrogenated is deadly for us humans. Bunge tender fkake, and fat works dont have the deadly partially hydrogenated in them. Crisco should be avoided, it is loaded with deadly trans fats.

I tried this with peanuts as I don't like almonds as much. I used a chicken thigh and it had a crispy texture but it has the bitter after taste of peanuts. I'll try it again with some honey roasted next time. Thanks for sharing!
Except honey roasted peanuts are not keto, so you might as well just use regular flour then? The sugar from the honey is probably worse than the flour, so your chicken wouldn't be low carb/keto , friend. I found a low carb fish batter on youtube somewhere that might be an interesting alternative. Don't underestimate the pork rinds, they do a great job. You might like it!

If you put the chicken on a rack after frying the bottom on the paper towel won't get soggy. You are right, it's best to season the chicken rather than the crust. Thank you.

I was actually excited for the pork rind chicken. It's a brilliant idea, love it! If that is wrong, I don't wanna be right either haha. I wasn't sure about the coconut flour and I was curious about the almond flour since I have a 5 lb bag sitting in my pantry. Coconut flour is actually made from defatted coconut pulp left after the oil has been extracted. Just buy it, it's readily available and not expensive.
Dear today i got to know there are many other coating styles except the tradionally used cornflour , rice and bread crumbs. Dear I loved the Almond coating the Most then coconut is secondary and them Pork (because pork is prohibited in our religion ) but the finall Results of all coatings is excellent.
I like a frying/candy thermometer.. I think walmart sells em for like $10 or less.. Just dont do like i did and take the thermo outta hot oil and rinse it in cold water or it'll shatter..

It didn't look like they were crushing. She needed two whole big bags of them crushed for a bunch of chicken... but let me tell you these were two bags of the most rock-hard petrified rinds that I've ever seen. I should have checked the expiration date but I whipped out the food processor and it still took about 5 minutes of full blast in the processor to get them crushed up. Technology to the rescue!!
