    I make this from the book but because I have wrist arthritis, I just place all ingredients in the food processor and pulse it a bit, works fantastic, the texture is more like ground meat and it's delish.

    1 onion
    Garlic
    Mushrooms
    Zucchini
    Tomato
    Carrots (purple, yellow, red) 1/2 cup
    1/2 cup capcicum
    Jelopeno chilli (half)
    4 cups greens (spinach or kale, bok choy, nappa cabbage, swiss chard)
    1/2 cup parley
    2 cans beans (rinse canned beans)
    1/2 cup salsa
    Rolled oats
    Mash oats and beans together with other cooked down. Mash together.
    Add spices
    4 grinds black pepper (1/2 tsp)
    1/2 tsps white pepper
    1 tsp mrs dash.
    Cook in 2 loaf pans. Spread bbq sauce in bottom of each loaf pan. Half mixture between both pans and spread bbq sauce on top before baking for 1 hr.

    Just a little tip I discovered somehow; get some dried mushrooms (what ever kind you like) and put them in a grinder to turn them into powder. It adds a real earthiness that fresh mushrooms don’t have. I use a repurposed coffee grinder for spices like this. It’s great in loads of things: soups, purées, mushroom “gravy”, etc.
    It’s an umami taste, like miso ❤️

      So true. If added with nutritional yeast, the powder together is really strong! I prefer Craterellus tubaeformis as it is so commond, dries well and has a strong flavor. Craterellus cornucopioides has even more taste, but it difficult to find.

      Have to go back through and write the recipe down as I don't have the cookbook. I have a modified version of this. I agree, I have found adding the powdered mushrooms adds more umami, and finely grinding the cooked mushrooms adds a meaty texture. This will be my Thanksgiving "turkey" and no post dinner coma.

    Omg! I threw this together last night and we had it today for lunch. It was so good but so filling! We are stuffed! Very glad the recipe made two loaves. I dropped on off at the in laws. They’re vegan due to being too lazy to cook and me dropping meals at their door

    Seriously, one of the best vegan loaf recipes I made. This one doesn't have that starchy/paste mouth feel like many of the lentil/potato versions. This recipe can be easily modified with various herb and spice combinations as well as veggies. Thank you!!!

    I love this recipe. Have one loaf in the freezer. I like to whirl the beans in my stick blender’s mini processor so they are mashed more and bind the loaf a little better. I think I like it because it has so many veggies included.

      I know this is late but I just discovered this channel. How would you cook the loaf you have frozen? Do you cook it ahead of time and then freeze it, or defrost it and then cook it?

    I made this the other night and pulsed the veg in a food processor before cooking it. It really helped the structure of the loaf. And it was delicious!

    I finally got around to trying this, and oh man it's delicious! I used the Grandpa's Eatloaf recipe which is just slightly different than the version in this video, and I modified it a bit. It didn't include kale but I added it because extra kale is always good I also added some liquid smoke because I like it. I left out the tomato because I don't like tomatoes, and the mustard and sage just because I didn't have any. My mouth was watering at the smell as it cooked, and it tasted as good as it smelled. I'll be making this regularly now. 😋

    I love your videos! The thing I like about your recipes is that they're pretty basic...down to earth...nothing fancy. I think I have most of your cookbooks but have only tried a few recipes. I have this lazy bone in me and I struggle with the motivation. (sorry for the true confession 😊). I definitely want to try this one. Thanks for all you ladies do...and the rest of your Team!

    Hi regular meatloaf uses bread crumbs, an egg for the glue-
    flax eggs maybe a good substitute?
    I'm going to use this recipe modified to try stuffed cabbage ? substituting oats - with riced cauliflower, eliminating BBQ (for hunt sauce), eliminating mrs. dash & jalapeño maybe use little veg. broth, flax egg & nutritional yeast?? Idk 😅, mix in with all varied veggies & beans. Stuff'roll Par boiled cabbage, tomato sauce bottom of lasagna pan & place rolled cabbage, top with sauce.. bake 350 covered w/foil 45mins -1 hr. Wish me luck 😅
    You both are such a blessing to all of us learning plant based cooking.

    LOL, yes, egg is used as a binding in meat loaf. This looks delicious and I will be adding this to my bean recipes. My favorite meat loaf (seldom made anymore, alas) uses onion, celery, worchestershire sauce, and poultry seasoning along with salt and pepper. I will adapt those seasonings to this as I found out it was the seasonings folks found they loved rather than the meat! Meat loaf sandwiches were popular the next day, and I think this will be good for that as well.

    I made mushroom gravy- added some garden veg - next I’ll turn it into eat loaf- or like 1/2 eat loaf and save 1/2 gravy to go over rice this was so so good!!

    Enjoy your channel. Stop eating this way during covet. 100 percent back to it now. Never looking back. Craving meat loaf though. I had meat eaters come to live with me and heard constantly how I am killing my husband he needs meat etc. He got a Hernia and I caved, he had to have surgery to repair. All I know is blood pressure out the roof on him and weight gain, me too. I felt like crap too. No energy, just three months back to eating this way and his blood pressure is down, mine too but still have it high sometimes. Weight has just came off me. Your channel is a great support for me. Just ordered your newest cookbook and have this one too. So will be digging it out of bookshelf. Thank you I wish you were my neighbors. I know no one who eats this way. I get told all the time you need meat and dairy. Even my doctor doesn't agree with diet. I am going to find another one. Just cannot figure out how. I cannot really pick my own have to go to the one my insurance recommends. I live in Central Florida, and its country.

    You didn’t mention the oven temperature but no big deal as it’s already cooked when it goes in.
    I enjoy the simplicity and the slightly chaotic presentation.

    I made this and it tastes really good but it was mushy. When I sauteed the veg they produced a lot of liquid. I drained the excess but I didn't squeeze it out. I wasn't how sure how it would be. I love that it is healthy and makes 2 loaves. Next time perhaps I should saute it at a higher heat to reduce the liquid. The onion alone was fairly wet.

    Just made it and am very pleased with how it tastes and holds together. I have your cookbook and made your roasted roots casserole as a side dish. You inspire me to try new vegetables!! Love that it is all fat free and that it also has a whole bag of chopped spinach. I would serve this to company.

    Just made this. Lots of liquid so I drained the veggies before adding to dry ingredients . I used Catsup cuz that’s all I had on hand. I also used 1/2 kale & 1/2 spinach. So delicious! I only had lemon pepper so that’s what I used too.
    This is going to be made at least once a month if not more! Yummm can’t wait to see how the sandwiches are. My husband loved it too!

    I used to make meat loaf regularly: lean ground beef, with diced onion, garlic, oregano, oats, egg, sour cream for supreme tenderness, milk, and a glaze made with a combination of ketchup mixed with brown sugar.
    I think I’ll try yours...If I can fit a small loaf in my toaster oven! Usually I only cook with a hot plate single burner, and a microwave...

    I love to make this. Just 2 in my home. We eat some the first day with mashed potatoes and green beans. Then a couple of sandwiches the next day. I cut the second loaf into serving sizes and freeze. We eat that over the next month. Always good!

    i was thinking a flax egg might be a helpful addition? but after i saw the loaf that was cooked last night....and how nicely it held together....maybe a flax egg is unnecessary! im gonna use kidney beans and black beans in mine so it looks more meaty (for visiting non-vegans) and ooh Jane i cant wait to do what u said & FRY UP SLICES OF IT the next day then i will mount each crunchy~crusted slice upon a pile of hot mashed potatoes! Mmmmm.

      @@SherryEllesson Check out their SOB burgers video. I bake them 350 for 30- 35 minutes. I don’t think you could grill them. The are really “sticky”. I don’t use a bun. I dip them in ketchup. I also don’t put turmeric in the recipe.

    An induction hot plate may be easier for you to cook with. The induction hot plate plugs in and therefore would eliminate the butane replacement cartridges. Love your channel ladies, always entertaining 🥰

    Meatloaf is ground meat, onion, seasoning, bread crumbs and an egg. Ketchup or BBQ sauce is put on top. Oatmeal or crushed crackers are sometimes used in place of the bread crumbs. Your "Eatloaf" contains way more veggies than any conventional meatloaf and sounds better by far

      @@pinkiepinkster8395 yeppers me too. But my husband is not fully a whole plant foods person so I still cook meat when I can't convince him to eat what I am eating, but he is getting there, kicking and screaming 😂

    I try to avoid the high sodium of the ca ned items. I soak a d ook my beans and chick peas. I will cook a couple bags and freeze individual containers for later use. Love this recipe.

    I don't like barbecue sauce or catsup, so any other ideas to use? Anyone? I also might try mashed potatoes with the oatmeal, with some beans too. My mother made the best real meat meatloaf growing up. She used eggs and soda crackers crushed in it, with green peppers, onions and I think mushrooms. I loved it cold with catsup in a sandwich.

    You and your mom are so active. My mom and grandma are in poor health. I tell them that their bad health has inspired me to be vegan and wfpb. But it doesn’t inspire them. The last time I have seen older people still with their full faculties was in the seventh day adventist church. One 90 yo didn’t need walker or wheelchair. One 60 year old still had original color in their hair.

    I made a loaf with oats a few weeks ago and I found the texture unappealing. I made another with chick peas and loved it. This recipe has many more ingredients. Maybe the oats will be less mushy than in the one I made.

      Oven temps are standard. Look up any loaf recipe.

    I love that you put kale in a fish bowl! Can you leave it on the counter like that or do you need to store it in the fridge?

    Eat Loaf open faced sandwhich: Good quality bread, mustard, avocado, greens, thick slice of Eat Loaf, more greens. If you made the Salad Reboot, add that on top too. Delicious! I cut the recipe in half and was sorry I didn't have more. Great recipie. Thanks;)

      I'm sorry but the coughing and sneezing, not covering your mouth, then later coughed into your hand, blowing your nose and not washing your hands is very disappointing. Then, you put your hands in the bowl to mash it up after you had coughed into your hand. I love your videos but this one was shocking. A Doctor's wife should know better. Sorry Ann, but it's true.

    I don't like food preserved in cans. It's easy to soak dry beans overnight and cook them in the morning. You can always refrigerate them and use them when needed. Alternatively, buy beans preserved in glass jars which is much healthier and you can recycle the jar while aluminium cans pollute the environment and are poisonous for the soil (highly acidic ph).

    I always used oatmeal in my meat love before I was vegan. No egg. And a can of alphabet soup....that's it. Then half a can of cream of chicken soup on top the last 10 min.
    But I cant wait to make this!!!!

    It's in the oven now..I did 350 degrees, they didn't mention temp, for one hour. Smells good. Smashed with fingers like Ann did 😄
