Yes to the poultry seasoning. My son called me recently to say that he can't get the good taste in his meat balls (meatloaf) that I had. When I told him I used poultry seasoning he was surprised. Makes all the difference. This was in the meat eating days, of course.
Tbis looks great! Question though. Does that counter top oven heat up the house less than the standard oven? 🤔 I love these recipes, but trying not to use my oven much during the summer, so I can try to keep the house (somewhat) cool. Ahh, the joys of not having AC. 😏

I need to try this version of meatloaf bites from the one I've been making. Except for the onion, a whole different set of ingredients. These look like they stay together. If you haven't done so yet, I would like to see how bagels and cream cheese are done plant based. I miss those. Funny, I don't miss meat, but I miss those. Is it okay to finely chop the mushrooms in a small food processor? For some reason, I have a texture problem with cooked mushrooms that upset my stomach, for some unknown reason. I have found that fine chopping them seems to work for me.

I know mushrooms are great and add a meaty flavor for dishes. I just cant get myself to use them. Is there something else you recommend that I can replace them with?
You could always use tinned lentils, which are already cooked. Green and brown lentils hold their shape better. The red ones tend to become a porridge, so might be less suitable for this recipe. They’re basically green lentils with the outside coating removed. (If you scratch the outside of a green lentil, you‘ll see it’s red on the inside). Best way to cook them is like rice: put one cup of rinsed lentils in a pot with two cups of water, bring to the boil then turn down the heat and simmer gently for ten minutes, then turn off the heat and allow them to sit for a further ten minutes to absorb the water. Don’t take the lid off the pot during this process, otherwise the temperature that’s built up will drop and the cooking process will stop. Hope That helps. 🙂
