Just made the lazy one-pot version of this. Took a huge pot, added olive oil, onion, garlic, salt, paprika, cumin, ground beef. Once cooked, added full 28-ounce tomato sauce, full 32 oz beef broth, a cup of water, 3-4 tbsp of flour, and 1lb of dry pasta. Simmered the pasta until it was cooked and then added 1.5 cups of heavy whipping cream and a cup or so of cheddar cheese. Came out awesome, but a little soupier at first which I like, and it's enough food for days of leftovers or will feed a family of 5.
@enthused7591 I make something similar except without cheese. Anyone can just skip the roux step and cook the pasta in the same pot and the starch from the pasta will thicken it fir you. I put mushrooms to bulk up the meal and I don't put cheese in mine.

This looks so yummy! I wish I would see more people, when cooking onions and garlic, letting the onions cook more and even start browning before adding the garlic, adds another depth of flavor. Garlic needs less time and tastes bitter if burnt.
For some reason most people don't know this. But yeah the onions or shallots take longer and the garlic only needs 2or 3 mins. When u smell it, its done or very close. Burned garlic is not a good flavor. I hv always loved cooking and grew up with the two best cooks and bakers, my mom and my Mimi and started learning from a super young age. I just tried this dish with my own adjustments. I haven't tasted a pasta this good in a while. The tomato with the cream flavor adds the perfect amount of tanginess to the sauce. I substituted ground chicken but still used beef broth. Used some leftover bechamel sauce instead of heavy cream.

I didn't have tomato sauce so I used enchilada sauce. I also didn't use the spices i put taco seasoning. In also substituted Velveeta cheese and sprinkled cheddar cheese on top. I just went with what I had available. Thank you for the base idea.

I didn't have tomato sauce so I used enchilada sauce. I also didn't use the spices i put taco seasoning. In also substituted Velveeta cheese and sprinkled cheddar cheese on top. I just went with what I had available. Thank you for the base idea.
