The Lincoln County process is a Sugar Maple charcoal filter before going into the barrel. When the Evan Williams barrels are dumped, the whiskey is run through a charcoal filter system to remove barrel pieces and some fatty acids but the two get conflated a lot.

The law was enacted because there was so much substandard and adulterated "whiskey" floating around that the industry wanted the govt to step in and impose a set of standards and level of supervision to ensure a quality of whiskey.

From what I understand Evan Williams is charcoal filtered after aging with activated charcoal that only removes cloudiness. I think many bourbons do this. No flavor is imparted by activated charcoal. Tennessee whiskey like JD charcoal filters before aging for mellowing and it does impart flavors.

The white label is a house favorite of mine. Charcoal Filtering and even the Lincoln County Process DO NOT disqualify a whiskey from becoming a Bourbon. The TTB considers the charcoal filtering/mellowing process a subtractive process, not an additive process. Ergo, Jack Daniels CAN be labeled as a Bourbon if they so choose.

The charcoal filtering process for bourbon takes place after the maturation process before bottling. Its via activated charcoal and it claims to further smooth out the flavors. But its completely different than the sugar maple charcoal filtering process which filters the whiskey pre aging taking out the things that the wood removes during the aging process. And the Lincoln county process is only legal to do in I believe Tennessee. Maybe only in Lincoln county. You cannot call it bourbon if you use the Lincoln county method. The charcoal filtering after aging is not the same as the Lincoln county process its pumped through an activated charcoal filtration canister. So yes it's still legal to call it bourbon because you're not filtering pre aging.

I really like what you said about buying in 2002 Bart. I could be wrong, but from what I've heard it seems like the early 2000s were some really good years for whiskey buying and drinking. "Scotch and bourbon" I can think of a few bottles that I wish I would have picked up back then, but I never gave to much thought about what I drank in the early 2000s. Maybe people will be saying the same about whiskey from 2019 in the 2030s??? Any thoughts anybody?

Scott is correct, Bottled in Bond isn't a "Minimum" of 50% ABV, it is required to be bottled AT 50%
And yes, Jack Daniels COULD be called "Bourbon" if they chose. For some very good marketing reasons, they choose not to.

@@ScotchTestDummies People can be REALLY touchy about that one. Technical, it qualifies under the rules as a Bourbon, and I certainly don't blame JD for insisting it's Tennessee Whiskey, that's a marketing thing they need to stay on point about.

Why don't you just download the Bottled in Bond Act and see what it says? "The distiller...may whenever necessary reduce such spirits as are withdrawn for bottling purposes by the addition of pure water only to one hundred percentum proof for spirits for domestic use...". If the spirit is for export then the language changes to "... not less than eighty percentum proof...".
Since they use the "not less than" language for exports, the use of "only to 100 proof" for domestic can be taken as being a requirement and not a miswording.

Bottled in Bond absolutely must be 50%. The statement "At Least" refers to the 4 years of aging. So it can be aged more than 4 years but, not less than 4 or it can't be bottled in bond. Even "Straight Bourbon" has to have an age statement if it's under 4 years. It must be aged at least 2 years and if it's 4 years or over it doesn't require an age statement.
