That highly nutritional meat around the seeds in squashes can be blended with honey and coconut oil/milk/cream/(or you choose something) then frozen for a fantastic treat later. I separate the seeds of all squashes and pan toast or bake for a delicious snack as well.
I baked 2 whole apples, only cutting 2 lines on their peel so they would not explode, and they were perfect when the squash was done ❤ Thank you, can't wait to try it

in case you see this, i recommend roasting the butternut squash WHOLE, until you can stick something through the fat part easily, this makes prep so much easier, it also locks in some flavour you miss regardless of how you're going to use the butternut squash afterwards, and makes peeling easy if you want to keep it more whole for something like a filet - stolen from Derek Sarno! good tip

One of my favorite packaged foods years ago was Campbell’s Select Gold Label Butternut Squash Soup. It was a savory soup with potatoes added. I’ve never been able to replicate it since they stopped making it, and every other butternut soup recipe I’ve found is on the sweeter side with things like apples or nutmeg. I miss that soup so much. 😢
I haven't tried roasting celery, but I am going to make this recipe. Who knows? I might find I like roasted celery and think up other ways to use it. I like roasted onions to have dark brown edges when I roast them. This is an interesting soup.

Great idea to reduce waste, vegans don't consume honey so it'd probably be maple or agave or date syrup etc 😊

I love this recipe. May I suggest trying it with a red Kuri squash? I find the red kuri squash is sweeter and produces a nice-tasting soup!

I always roast the squash whole and then scoop stuff out…a bit less carmelization but easier to manage 🤷🏽♀️
