How to make Korean spicy cold noodles (bibim guksu, 비빔국수)!

  • You'll love how easy, refreshing and delicious this noodle dish is! Bibim guksu is a cold noodle dish with fresh vegetables served in a spicy, sweet and tangy gochujang sauce. You can add gochugaru (Korean red chili pepper flakes) for an extra kick. You should really double or triple the sauce for more bibim guksu later. You can arrange everything in a serving bowl so it can be mixed at the table. The sauce can be served on top or separately. This allows each person to adjust the amount of sauce to his or her liking. Or, toss it all together before serving.

    Ingredients:
    Sauce:
    3 tablespoons gochujang
    1 tablespoon gochugaru (adjust to taste)
    2 tablespoons sugar (or corn syrup/oligo syrup)
    2 tablespoons vinegar (any clear vinegar such as rice vinegar and apple cider vinegar)
    1 tablespoon soy sauce
    1 teaspoon minced garlic
    1 teaspoon Korean/Asian hot mustard paste, gyeoa - optional
    1 tablespoon sesame oil
    1 teaspoon sesame seeds
    Toppings:
    1 small cucumber (about 3 ounces)
    1 small carrot (about 3 ounces)
    2 ounces red cabbage leaves
    2 ounces lettuce leaves
    1 boiled egg - optional
    Noodles
    4 ounces somyeon (thin wheat noodles) or buckwheat noodles

    This is a fantastic versatile recipe. I love that sauce. We put ours on the side. Maybe this is super American but we made a winter version heating it all up and cooking the veggies in sesame oil. We live in a cold climate. It's great both ways.

    Korean Bapsang, Thank you for your video. Could you please help and please tell me where I can buy these Korean chewy noodles to make Mulnaengmyeon or I think you call it Bibim Naengmyeon. I live in Japan and I have checked with Amazon Japan, but they do not sell these noodles. I have lived in Korea and I love Korean food but now I live in Japan. Your help will be greatly appreciated.       This one is bibim guksu. It can be made with somyeon (or somen), which I'm sure you can easily find in Japan. For naengmyeon noodles, I'm sure Korean markets in Japan carry them. Sorry I'm really not familiar with Japanese sources for Korean food.
