  • We end the series where we started it, back at the legendary Geylang Lorong 29.
    Swee Guan is the name when it comes to hokkien mee in Singapore. I doubt that there's another place with more reviews than this place. Still sticking with the old ways of using charcoal of their noodles, the incredible smoky scent is but one hint that they champion authenticity.
    It's getting so difficult to pick a top 3 now.

    The quality of this review (particular this series finale) is outstanding, the language used simple yet to the point. I can’t imagine much of it being scripted since it’s an on-site review which makes it even more commendable! As much as I love food, I found myself enjoying the review even more.

    I’m currently pregnant and have been craving Hokkien mee after quitting for a good 15 years after strangely developing an allergy to prawns…was searching for a good one so I won’t have to waste having allergic reactions on a subpar one. Thank you for this!!
    Would love to see more foods in this series such as fish and chips, onion rings, carrot cake (separate reviews for black and white would be nice), wanton mee, hor fun, chicken pie, kway chap, nasi lemak, and the list goes on 😭

    Totally agree with the more noodles part. I realise after watching all the episodes that you like the HKM pure, no lime no chilli. You are a true HKM connoisseur.

      HKM with lime and chilli is also great but it hides too many details, especially when I'm trying to review it. you can put lime and chilli on white rice and it'll also taste good XD

      Can eat original first.
      Then squeeze a little lime makes it different. Don’t squeeze too much just one squeeze that won’t make any potential seeds fell out.
      Lastly tried it with the chili because the taste profile will be the strongest. But the sweetness and spiciness in my humble opinion blends and compliments the best with the unami and wet sometimes viscous texture.
      The sweet balances with the unami and perhaps some is just only salty flavour which has already been amalgamated with the sour lime flavour profile earlier on. The spiciness will cut the wet and viscous or starchy texture refreshingly, sort of like cleansing the palate, making you ready for yet another mouthful and so on and so forth…..

    Looking forward to the grand finale, I honestly am not sure who's winning at this point. Also been back to Simon Road's to try the dry, I like the wet better. However, I'm pleased to see they're offering extra noodles for +1 dollar that fixes my "5 dollar not enough, 8 dollar too much" problem.

      ooo the most value 1 dollar you're going to spend. the dry one is a very unique version, pretty tough to compare to the typical hokkien mees.

    4 plates of noodles rating when its good! Consistency tends to fall off when there a crowd, i.e , he collects money while serving the noodles, leads to the lower part of the wok burning.
    Suggesting to do Kway chap next !

    save the best for last! their $10 always serve large prawns but now it’s comes in the smaller circular plate (prev $8) instead of the larger oval plate. i dunno abt your top 3 Alderic, but for me it’s gotta be Swee Guan, Come Daily & Hainan HKM.

    Might I interest you in Davis Prawn Court's hokkien mee in 209 hougang st 21 hawker centre?
    The hokkien mee is fried by the stall owner's dad at night only. BUT it is so good and creamy, one of the best hokkien mee I tried. So creamy in fact that if I go for their $8 size, I actually feel jelak at the end of eating.

    I would like to hear your opinion about Wok Hei because smokiness is not just 5 percent for me.

      without going too much into it, wok hei is the phenomenon where the wok smokes profusely due to high heat cooking. at this state, a lot of good things are happening for the food - high level of Maillard reaction because of the high surface temperature but not burnt because the food is tossed. moisture is expelled rapidly due to the heat and convection currents. food is kissed by the flames running up the sides of the wok, giving that slight smoky burnt aroma.
      but, all these reactions manifest differently for different dishes. maybe the veg dish turns out watery because the heat wasn't high enough. maybe the stir fried meat is a bit flat because there's no color on the meat. maybe the stir-fried beef hor fan is lacking that signature smoky stir fried scent. a good chef will be able to tell what the wok looked like based on how a dish looks and tastes.

      @@Alderic. couldn’t agree more. i think not all dishes with good wok hei tastes smoky or charred. that depends on the smoking point of the ingredients in the dish. but with hor fun somehow it tastes better when the hor fun is seared. i don’t think i can describe wok hei as eloquently as u :)

    $10 for so little ??? prawns are ex .. understand but noodle damn cheap ok .. siow. The creaminess is from the prawn stock and if they add more water instead of stock during frying the noodle wont be as nice. No starch is used yo .. starch is used in Hor Fan not hokkien mee.

      noodles are cheap but it's very expensive to make the noodles tasty. prawn stock doesn't make it creamy, too much of it will just flood the noodles, you need starch for it to gelatinize. I have never seen people add water to hokkien mee before. you don't need to use starch if you can control how much starch will seep from your noodles. based on what I've ate in this series, that seems to be a challenge even for experienced hawkers.

      Come on lah man (or woman)….you must consider whether is restaurant, mall foodcourt, kopitiam stall, hawker centre or private enterprise-managed hawker centre.
      Big big difference if you chat with a range of F&B operators, then you will get a bigger picture.
      Plus nowadays, you see the kopitiam sales transactions alot record high, you know where the money goes.
