  • I love Greek Gyro sandwiches! After receiving a request to cook up Gyro on this channel I was excited, but wondering what would be the best way. I decided to smash them on my wildfireoutdoorliving.com/gri... and the results were amazing. I got the Gyro recipe from www.allrecipes.com and the tzatziki recipe from www.loveandlemons.com/ Both recipes are below.
    Ingredients
1 small onion, cut into chunks
    1 pound ground lamb
    1 pound ground beef
    1 tablespoon minced garlic
    1 teaspoon dried oregano
    1 teaspoon ground cumin
    1 teaspoon dried marjoram
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
1 teaspoon freshly ground black pepper
    ¼ teaspoon sea salt
    12 tablespoons hummus
    12 pita bread rounds
    1 small head lettuce, shredded
    1 large tomato, sliced
    1 large red onion, sliced
    6 ounces crumbled feta cheese
    24 tablespoons tzatziki sauce
    Directions
Place onion in a food processor and finely chop. Transfer onion to a piece of cheesecloth and squeeze out the liquid. Place onion in a large bowl.
Mix lamb, beef, garlic, oregano, cumin, marjoram, thyme, rosemary, black pepper, and salt with the onion using your hands until well mixed. Cover bowl with plastic wrap and refrigerate until flavors blend, about 2 hours.
Place meat mixture in a food processor and pulse until finely chopped and tacky, about 1 minute.
    Tzatziki Sauce
    Equipment
    Kitchen Towel
    Box Grater
    Lemon Juicer
    Ingredients
    ½ cup finely grated cucumber
1 cup thick whole milk Greek yogurt
    1 tablespoon lemon juice
    ½ tablespoon extra-virgin olive oil
    1 garlic clove, grated
    ¼ teaspoon sea salt
    1 tablespoon chopped dill
    1 tablespoon chopped mint, optional
    Instructions
Place the cucumber on a towel and gently squeeze out a bit of the excess water.
In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.

I had my first gyro sandwich in 1980 when I was in high school. I've been hooked ever since.
Living/visiting in different parts of the country I sometimes crave this comfort food while away from home.
Thank you. This looks totally doable & absolutely delish! YUM

I make the meat in a bread pan.....I like your idea and will try it as we can't get good Gyros here and I have to make them myself everytime I want to make it. The good thing about the baking pan in you can vacuum pack the left overs after the slices you used and freeze them. they are good for like months. So I make 2 baking pans of gyro meat and then freeze what we don't eat into small 1-2 pack so that we have a ready meal. Thanks for your channel. Love your ideas

Hey Greg, I am a Gyros addict and I never thought of like the cheat method you had used. Personally, when it comes to Gyros, I have good browned meat on a skewer in mind. You have a great flat top, I would use thinly sliced meat, marinade them overnight, then slice them into smaller strips, not too long and roast them with very high heat on your flat top. Season with salt a few Greek herbs at the end, and voilà, there you have it. How would you make a Döner Kebab without meat on a big skewer? This calls more like the approach you've been for the Gyros. Mhhh yours looked delicious regardless.

I do these a couple three times a month. Usually in the oven in loaf form, but will definitely be doing it on the Blackstone at the cabin this summer (maybe even a riff on my smash tacos). I like 100% lamb (Impossible burger for my veg-head wife). My son can't stand store-bought pita and insists I make it (same goes for bagels, and we live in NY).
I like sliced cucumber in the tzatziki and blend some onion with the garlic in the Ninja smoothie jar.

In Greek most of the time there will be some French fries on it as well. And the pita traditionally will be warmed by laying it over the cooking meat with 1 side. Then you would have a perfect Souvlaki. Which is what you make, not a gyro :-)
