    Skyline Chili (With My Adjustments)
    Prepare at least one day before use for best results.
    1 pound ground beef
    1 pound ground beef heart (or substitute ground beef)
    Water (to cover)
    15 ounces tomato paste
    8 ounces tomato sauce
    2 ½ tsp salt (I adjusted to taste after simmering for 2 hours)
    1 ¾ tsp onion powder
    1 tbsp fresh lemon juice
    2 1/2 tbs apple cider vinegar
    2 tbsp Worcestershire sauce
    2 tbsp + 1 tsp Fleischmann's instant dry yeast
    1 tbsp + 1 tsp Brewer's/Nutritional yeast
    1 tbsp + 1 tsp unsweetened cacao powder
    1 1/2 tsp garlic powder
    1 3/8 tsp paprika
    1 tbsp + 1 tsp allspice
    1 5/8 tsp ground cinnamon
    1 ¼ tsp ground clove
    3/4 tsp ground cumin
    1 tsp cayenne pepper
    ¼ tsp chili powder
    1/8 tsp black pepper
    Place ground meat in a large pot and cover with cold water. Whisk meat until it is broken up into a slurry, then add tomato paste and tomato sauce. Turn the heat to medium-high and simmer until the meat turns gray. At this point, add the rest of the ingredients and adjust the heat to a low simmer with no lid; after two hours of simmering, taste and adjust the ingredients as necessary.     Greg, I live in Columbus, OH and live maybe 10 minutes from a Skyline restaurant. I've been eating their food for years! I've tried duplicating their recipe with what I find online and something always seemed missing. I saw a video from Food Wishes about chili and he used cocoa powder. I tried that in the Skyline recipes I had and that was it! I will say this about Skyline now with their dogs: Their dogs are about 1/2 the length and 1/2 the width of normal hot dogs (more like lil smokies on steroids). This is a great video. My son loves Skyline so now I can make it for him!

    I’m born and raised in Cincinnati and I’ve seen dozens of Cincinnati style chili copycats and this is by far the most effort someone has put in to get it right. Those coneys look almost exactly like the real deal. Great work!

    I made this yesterday (7-14-2024) and it was great out of the pan, even better after over night. The only thing I did different was I used 80-20 ground pork in place of the beef heart. I couldn't find it in a pinch. Absolutely the best chili dogs I have had in a long time. My toppings were grated white sharp cheddar, diced yellow onion, and thin sliced jalapeno. JUST WOW 11 out of 10 would recommend!!

    I live in Kentucky and I used to drive an hour and a half to the north part of the state to get Skyline chili (and LaRosa Pizza). Skyline is my favorite Cincinnati chili. Skyline chili now has a location a half hour from my house, so now I don't have to drive so far to get my fix. Thanks for posting the recipe.

    Hi Greg, fellow european here ! Don't worry about the measurements - the guys here following U.S. recipes (at least that I know) have those measuring cups, which is hundred times easier than starting to convert into grams...
    Hats off for spending the time trying to get the closest to the original, step by step. Another great video !

    Greg, I was born in Cincinnati on this day. Growing up I had Skyline many times over spaghetti called 3-ways. These days I make my own at least once a month which is different from what you can get in a package. I like my version better. Thanks, Doug K.

    I live in New Jersey and grew up with the likes of "RUTT'S HUT" , "THE HOT GRILL" and "JOHNNY & HANGES" and "LIBBY'S LUNCH"...... all very famous for these type of hot dogs !!!! I always wanted to try " SKYLINE " and never had the chance...... so I am going to try your recipe !!!! Thank you.

    Cheese is always at its best at room temperature.
    You nailed it with the spices.
    Mine are just more intense.
    Including the cocao powder.
    I even put it in Texas chili con carne.
    Not for sure what chili powder you used but Gebhardt chili powder is ancho chilies.
    I normally just make my own because I have just about any chilie you want from Mexico.

    Worked at a Skyline Chili in my hometown of Middletown, Ohio during my senior year of HS in 1998. Looks like you nailed it. Blue Grass Meats was their hotdog supplier, but Nathan's are close and I pretty much always have them in the fridge. I never got any privileged info on the chili recipe, but I recognize you've done your homework. We cooked the dogs on a flat top and steamed the buns and made a great point of keeping those heaping mounds of Wisconsin cheddar tall and cold so they could melt at the table or in the takeaway box and have that lovely contrast.

    Cinci resident. Long time watcher of your channel. I think the cinnamon is the most destinct flavor/smell of Skyline. Also fyi, they use Kahns pork and beef weiners, very mild cheddar and Klosterman bakery buns. Keep up the good work.

      Ronnie I mean you cant go full in on skyline and just gloss over the weiners, cheese and buns. They make up 2/3 of the experience. You have to have those small Khans, slightly warmed white klostermans and fresh grated, super mild cheddar thats fluffed by a very large greek woman. Served on a plastic plate. Might go right now…

    Just made this, and awesome job on the recipe! It’s comes really close to the original. The only things I’d add are, if you’re buying ground beef from the typical grocery, there’s no need to grind it again at home as long as you mash it well in the water, and the cheddar cheese from Skyline is a pretty fine grate.

    Skyline uses a very small hot dog that is boiled to death...lol..it almost seems to soak up that chili like a sponge!! BTW..the Cocoa powder was the right move,it's pretty common knowledge that Skyline uses cocoa or chocolate in the recipe!! I was born and raised in Cincy and can almost smell the chili as I watch you make it!!

      Thanks for the comment. I was watching an actual Skyline training video, produced to show their trainees. The video shows them cooking those little dogs on a flattop. The production looks like it was from the 90s. Have they changed their procedures?

      I thought it was called a "Greek" style dog because the inventors of a few of those rust belt sauces were Greek cooks.
      Like Gust Keros in Detroit, John Mitsos and George Papazekos in Northwest PA, Nick Sarakatsannis in CIncy, etc. They all invented those meatsauces with the strong cumin smell to em. A little different from Skyline though since most of them didn't have that slight cinnamon background in it; if it's in there I never noticed. Also tended to be spicier, peppery. When I lived in Cleveland you could get them on footlongs, tasty stuff.

    Grew up in a Greek restaurant, that uami taste that you got might have been beef bouillon, dissolved after the meat starts to boil. The yeast ingredient could be just bread crumbs or a dough slurry used for tightening up the chilli ?? I can't see the nutritional yeast.... never seen tomato paste used without browning it..... Which also adds umami.
    At least this is what I remember my Dad using to Chef up recipes. But your the expert!! Love your vids!
    Btw never had skyline chili and I'm from Chicago..... So there's that. You're probably spot on as usual!

      The chili is pretty loose and yeast is listed as an ingredient. I've watched several of these "Coney" places (on video) adding the ingredients, directly to the water. Thanks for the comment!

    Note the thing you are missing which add to the coney "experience" : The cheese is much more finely shredded than what you used. Also you mentioned "3-way". This is really spaghetti, Chili and Cheese (not a hot dog/bun). A 4 way is a 3 way with Onions OR Beans...A 5 way is both Onions and Beans.

    Greg a while ago I mentioned a burger joint in Tulsa, we also have some great Greek hot dog places. If you’re ever in Tulsa again you might try Coney Islander or another one is Coney Island Hot wieners, both started by Greeks in the 20’s. Thanks for another great video!

    Nice detail on this cook. I've long heard of the Beef Heart component in Cincy/Skyline chili. I've not been able to get Beef Heart. I really want to try it out. The Coca Powder I have heard plenty of times. I don't recall it being listed as an ingredient on the cans available online. I will have to give this recipe a try without the Beef Heart. Wienerschnitzel makes a great Chili Dog or Coney. At least they did in the early 80's when I lived in the LA area. Would be nice to see your take on Wienerschnitzel. I know you have made Tommy's Chili before. Would be nice to see a redo on a hot dog.

    I’ve been using the Chef John Food wishes Cinci chili recipe for years and I’m going to update it with the cacao and the yeast like you are using here. Friends that have been to Cincinnati say I’m nailing the Gold Star chili flavor so I’m thinking with those changes I’ll get closer to Skyline.

    If you ever get a chance to make it, you should get a can of skyline chili and add it to stouffers mac n cheese and add some extra cheese as you want.
    I absolutely love making chili mac this way

      IDK about that bruh, Gold Star has a smoky taste probably because they grill their doges or use liquid smoke but it hits different.

    As a Cincinnati area resident and being familiar with skyline the appearance of what you made looks pretty darn close to what you get at the restaurant . Nice work. Obviously not a good bowl of regular chili to eat but it's wonderful stuff on a 3,4,or 5 way or chili dog. Ive never tried to make it but it does seem mysterious to replicate at home. Funny fact is they have a handful of locations around south Florida as well for the snowbirds in the winter.

      It's not frequently consumed that way, but I think it's great to eat hot from a bowl or even kicked up with any combination of beans, onions, cheese, hot sauce, oyster crackers, chopped-up hot dogs or even sour cream.

    Strangely enough for me here in Canada Greg, I still do everything i imperial mesurements when it comes to cooking.
    Body weight is also in pounds, and height is still in inches, although we are supposedly totally metric. - lol
    Also oven and meat temps are also imperial. - Go figure - Cheers!

    Hot Dog are always steamed in hot water. Unsure if they season the water. Hope that helps.

      Every Cincinnati chili parlor (that's what they are typically called) that I know of grills the hotdogs. Buns are steamed, but not the hotdogs.

    Looks dead on. The only tweak I would make is you need much more finely shredded cheese. Even the "skyline" cheese you can buy at the grocery is not as fine as the stuff they use at the restaurant. Shred it yourself from a block of good quality soft mild cheddar with the finest shredder you can find.

      As a fellow Cincinnatian, I know it's a popular rumor that chocolate is in the mix but it's false according to the reputable sources I've seen (unless they are trying to pull a fast one by distinguishing chocolate from cocoa powder.) I'm sure it makes its way into some home recipes but it's not typically in most restaurant versions including Skyline specifically. I know natural flavors has a lot of leeway, but I don't think you'll find chocolate on any of the ingredient lists of the consumer Cincinnati products (i.e. cans, pouches, frozen or spice mixes.)

    Sup greg, idk i had skyline in Florida last time, idk if same? Was really good, had more than should, ive made evwry alteration if the "chili" youve done, all so good, distinct in way, looks great, will get help have bext weekend, or sooner lol, in ri olnyville NY system wieners, and wienorama are kings, just meat chili sauce, steamed onions, mustard and celery salt on them, one mire cinnamon , one more allspice.. but when had skyline in Florida it was close, just toppings.. i have to check but recipe looks firmilar? I love when do these copycats of "chili" dogs, wieners.. if can check out olnyville NY system prov RI, or wienorama Cranston RI. I know mentioned in past, i know gonna love this, i grind heart when can get it, harder now days. Sry rant lol , tyvm tc

      I think bread crumbs would have a dramatic impact on the texture. This is a pretty loose chili.

    Skyline doesn’t have cocoa, that’s Gold Star which is what makes Gold Star disgusting compared to Skyline.

      The pouch sure gave off a cacao smell. Once I added the powder the flavor became way closer to the Skyline I had purchased. And remember, this is not sweetened cacao.

    Love a chili cheese dog once and a while but they need to be charred. leave off the cheese and add a dash of Franks red hot or chalula. I like the heat.

    Okay you picked up on a lot of the secrets, but I think the technique you used for some of it reached the same goal but in a different method. People get really lost trying to make/copy this Chili. My father worked for Skyline and we have been cooking it at home since the '70s. At the time my father worked there Skyline had a deal with Hershey, so believe it or not there was a Hershey chocolate bars not Hershey Cocoa in the chili. I have no idea if that is still the case or not. I am also sure the recipe has changed from the time it was made in the '70s as well, being that Skyline is a much bigger organization now. Below is the recipe:
    In a large pot, cook the following ingredients for two (2) hours after reaching a boil:
    2 lb. Lean Ground Beef - raw do not brown
    1 quart + 1 cup Tomato Juice
    1 small can Beef Stock (broth)
    1 tablespoon of Salt
    1 teaspoon Cinnamon
    1 teaspoon Ground Cumin
    1 pinch Ground Clove
    1 teaspoon Ground Black Pepper
    1 teaspoon Allspice
    1/8 teaspoon Garlic Powder
    2 - 4 tablespoons Hot Chili Powder (or to taste)
    2 dashes Worcestershire Sauce
    1 teaspoon of White Vinegar
    1 Large Onion, peeled and whole scored, do not slice or dice
    2 Bay Leaves
    1 tablespoon of Crushed Red Peppers (or to taste)
    1 Hershey Bar
    Pour tomato juice in a large pot. Tear apart Ground Round into small pieces and stir them into the tomato juice (with food safe gloves massage meat until fine). Add other ingredients (except Hershey Bar) in no particular order. Heat on HI until it comes to a boil (stirring occasionally). Reduce heat to LOW, cover, and cook for 1½ hours (stirring occasionally). Add one Hershey Bar (NOT OPTIONAL) and continue cooking for a half-hour. Cool over night in a non-metal container. Skim fat, reheat on stove, and serve over Spaghetti noodles with shredded cheese and chopped onions (Kidney Beans are OPTIONAL and served on the side or a layer not cooked in Chili).

    I was in Cincinnati as part of a team for a large machinery acceptance test and were taken out for dinner by the company to Skyline Chili. I have no idea what all the fuss is. Watery spaghetti noodles, weird tasting chili and cheddar cheese. As we all tucked in I could see the faces of the locals expecting our nirvana experience so I pretended it was great so as not to insult them. I guess you need to grow up with it.

    Sorry Greg. I wasnt raised in the Ohio area. This is not a receipe I would use to make a Coney dog. Allspice,cinnamon and clove has not place in my coney island hot dogs. So if your from that area I guess it would work,but not in mine.

      No worries, but I think you'd be surprised it you gave it a try. One thing I learned from doing all of the research for this hot dog history is the Greek influence. a few of the dogs in this series had ingredients like allspice. These ingredients don't overwhelm the chili.

      Their saying "chocolate" isn't an ingredient. Cacao is one of the raw ingredients used to make chocolate. I'm sticking to what I smelled and tasted and the immediate change to the recipe once I added the cacao. Basically, not giving up a secret ingredient without feeling like you're lying.

    Don't even understand why anyone would need to copycat this. It not expensive and its widely available through Kroger and Amazon. Making a Skyline "Cheese Coney" (they're Cheese conies, not chili dogs) is easy: Get a pack of hot dogs like Oscar Mayer or Kahns and cook them any way you like, put the cook dogs on a hot dog bun, open and heat up a can of Skyline Chile then pour 1-2 tablespoons on each Coney, and then add some mustard if you like, some finely chopped onion, then top with some finely grated pre-packaged cheddar. It could not be easier.

      Mostly agree but I'd add the mustard to the hotdog before the chili. Also the video mentions a chili-cheese which is distinct from a cheese coney, but it is a real thing (basically a cheese coney with cheese on the bun rather than a hotdog and known as a chili-cheese sandwich.)

    Skyline does NOT put cocoa powder in their chili! There are many YT videos with Skyline and other chili parlors, almost all do NOT use cocoa!
    Also, the chili that comes in a packet, tastes much different than this skyline chili at the restaurants!
