Yes I agree , we have lived aboard for 13 years and only the sea cocks when we were leaving the boat . But then we were confident in the condition of all the fittings . Only fit bronze sea cocks , brass will fail , plastic may crack and is not fire proof .
After watching the rest of the video , you really need to check ever through hull fitting , from what I saw , some only had one hose clamp , must be two and Opp to each other . Fittings look like plastic . I would only go for bronze . Costly but worth it . A job for your next haul out . You can do it your self .
The seacocks are not at all one way valves. Just simple ball valves. As far as seacocks open or closed its up to you. Alot of people leave them open, some people shut them religiously. It depends how much you trust your hose clamps and whatever they are attached to. If the hose comes off or a fitting breaks the boat will fill with water, the bilge pump may or may not be able to keep up.... Might be a good idea for you to close them till you are more familiar with everything and the condition of stuff. Nice to see fairly new looking marelon seacocks. And the galley sink should drain straight down to a seacock under the sink and gravity drains it straight to the sea.
Great insight! Thanks for letting me know. I am actually going to be swapping the sink out. Turns out there were barnacles in my seacock 🤷🏼♂️. I just want one drain, straight out with the gravity! I agree though, until I know all hoses and clamps and valves are secure, I’m going to be closing them on the regular! Thanks for the info! 🙌🏽 I also was excited when I saw the new Seacocks... one of the reasons for the purchase.
Do not try to dry your boat up with butyl tape that's an old school compound... Through deck hardware fittings and port lights I recommend 3M 4200 And boat life life seal... Comes in black silver and clear never use silicone...

As a rule of thumb you do not leave your sea cox open when you are not with your vessel..
At least you aren't drinking bud lite.
And double clip at 180 deg to each other .
Sounds to me like your waist tank is full...
