I was putting my daughter (7 months old) to bed while watching this on my phone...I couldn't help but laugh multiple times through the video, waking her up in the process. Thanks for that...I still call it worth!
Ah yes finally something I am an expert in the great whiskey era of Cincinnati-Ohio, Missouri.
Well that turned out pretty good, all things considered. Glad you liked the double oak. Seguin also does this neat thing where they sample their staves through a gas chromatography machine to see what the predominant flavor compounds are. Then they put like staves together so they can give "caramel barrels" or "vanilla barrels" or whatever barrel note that the distillery is looking to get. Some cutting edge whiskey science.

I am getting a bottle of Jameson Caskmates Fourpure Limited Edition Irish Whiskey on Wednesday and I am extremely excited to try my first limited edition whiskey.
So I have a Double-Oak Starlight pick and the whiskey that went into the finishing barrel was a blend of 4,5,7 yr Bourbons. It's pretty amazing.
Can't get more general about Missouri than Cincinnati

I was somewhat waiting for a David Nicholson review. I was born and raised in St. Louis and St. Louis County(gladly left about 30 years ago). Nicholson Bourbon has been a staple in the area forever it seems, however it was always the 1843, not the Reserve.

Looked up Tenth Ward Distilling Company. Definitely not Baltimore. The distillery is in Frederick, MD. Will try to go there the next time I attend a Frederick Keys game.

If you get a chance (once the covidicus is gone) I highly recommend a visit to the Huber Orchard and Winery, which is home to the Starlight Distillery. On most weekends in the late summer and fall they have live music and it is an awesome place to wander around.

Rex triggered a question I've been wanting to ask for a long time now. Is anyone making whisky with malted corn? If not, why not?
I also would like to know the answer, and am thus commenting so I can get notified by anyone who answers

Generally you don't need to malt corn or wheat, as most mashbills will use a small amount of malted barley for there to be enough enzymes available.
For the example, Scotch Whisky must have some malted barley used to be called Scotch Whisky. This is an example of this practice and is part of laws governing Scotch Whisky.
Rye is very difficult to work with, so most distillers will either use again some malted barley in mashbill, or some malted Rye instead (if they want be 100% Rye).
If you look up the details of Tenth Ward Smoked Corn from this video you will find it still has some malted barley in the mashbill.
For 100% corn whiskies it appears the options are 1) use commercial enzymes instead or 2) malt some of the corn. Depending on laws and regulations involved in making Whisky, the first might not always an option.
I understand the reason malted barley is added to most bourbon mashbills. What I'm wondering is if malted corn can replace malted barley in doing the same job, and also if and what changes it may cause in the distillate therefore the taste of the final product.
@@onggia850 Malted corn does the same job as malted barley to a certain point. Mainly in the process of getting fermentable sugars available for the wash. It will differ in other aspects that aid the outcome of what the worts and wash produces that then determines some of the characteristics of the resulting spirit.
Put another way, in the same distillery using the same processes, a whisky using 100% Malted Corn v 100% Malted Barley is going to give you a different end product.

The Nicholson Reserve is good, but their 1843 is better. Pretty hard to find in some areas, but's it's a really good BiB for $25-$30.
