- Tired of plain old peanut butter? Or interested in making your own nut butters? Walnut butter is our flavor of choice. Great for its omega 3 fatty acids walnut butter is easy to make and delicious to eat.

You can simplify sifting walnuts by putting the nuts into a tall container and shaking. Small particles will settle to the bottom.
I suggest soaking the walnuts 8-12 hours prior to roasting. This helps break down the phytic acid and lectins.

Thank you for this great video! You provided just the right amount of detail and great tips regarding avoiding bitter roasted nuts and adding oil or water. I tried your recipe and I am in shock about how delicious this turned out. I love nut butters and have been trying different brands at Whole Foods and Moms Organic Market - but so many have the separated oil - which I don’t want to deal with. I doubt I will buy store bought again - the fresh roasted walnut flavor with a dash of Himalayan salt and a tablespoon or so of raw honey - fantastic!! I never thought it would be this easy!

Before you add the salt and HUNNY you can squeeze some out for your salads.
I just closed 10 jars plain Walnuts and I left the oil in. When ready to use I squeeze the nuts through cheese cloth and use the oil for my salads face or hair.

Why wouldn’t you add honey? It’s super healthy, especially if you get raw honey…

Hi. Thanks for this video. I saw a recipe online and it said the shelf life for plain walnut butter was 6-8 weeks. However, if you add more ingredients the recommendation was 1-2 weeks. They also recommend soaking the walnuts overnight before drying and baking.
Why soaking overnight?

Walnuts have the highest omega 3s because it isn’t a hybrid…a lot of time the original or heirlooms has the highest nutrients…walnuts almonds and Brazil nuts are not hybrids also
Did you have to soak them first ?

Go to Trader Joe’s or Whole Foods they have good quality walnuts in the bag and you won’t have that problem

Adding water actually *thickens* the nut butter?! Who knew? Also, doesn't roasting risk destroying the omega-3s and/or creating trans fats? I've been trying to find some evidence one way or the other, but I've so far come up short.
Don't worry about roasting. Choping at high speed destroys a lot of nutrients.😕
If you want healthier nuts eat them raw and whole.
@@nebo274 - Well, roasting can result in the creation of acrylamides, which are carcinogenic, whereas merely heating due to high speed blending does not. And the fragility of omega-3s while still in close contact with their parent plant source has been greatly exaggerated.

@@curdsession1211 Blades create high temperature and exposure to oxygen and that makes damage. So if you want all nutrients, eat raw.

I know this is an old video but I am trying to figure out what "particulate matter" is in this context. I have walnut bags that are given to me free and I want to make a butter out of them. What is it that you are pulling out of the walnuts so I know what to look for.
The nut meats have a thin papery skin that rubs off somewhat. I recently made a batch of wet walnuts. I sifted and rubbed them before and after toasting.
No sugar! Salt instead;)
Hi! What are your experience about the shelf life? I'd keep it in the fridge, but I'm unsure about how much time before it goes rancid. The peanut butter I usually buy can stay in the fridge quite long - between starting and finishing the bottle nearly 4 months passed, I wonder if the homemade walnut butter can do the same..? (The peanut butter is 99,3% peanut, the rest is salt, no other additives.)

The roasting process will destroy the Omega 3 Fatty acids lol and why remove particulates then add them back after?

Yes, the skin is bitter, but it's a healthy part of the nuts.

@@SoftwareDownloadSuccessful ok thank you. It’s just starting to get hot here so I didn’t want to turn on the oven. I tried it in on top of the stove with a iron skillet. It seems to work somewhat but I think the toasting would have been better. I added a little walnut oil and maple syrup instead of honey
