The achar can actually last for months in the fridge but never rinse the cucumber and carrots with water. The idea of adding salt is to remove the excess water and washing it will defeat this step. Just squeeze the cucumber with a cheese cloth and most of the salt will actually drain away with the cucumber juice.
We can dry it under the sun as well right? I remember one of my aunts friend putting it into the washing machine to spin dry in a cheese cloth! lol! but thats because they do it for commercial purpose. The other recipe that i really miss a lot of the Green Chili pickle that's stuffed with young papaya and dried prawns.
@@headhuntersjay sun drying is after squeezing out the excess water. Hardly anyone does that these days as dust and dirt will probabaly settle on the food with this method. I have made the stuffed green chilli pickles, hardly anyone makes them too these days. They are delicious.
