Easter Ham Pie
It's a meat blowout! This ham pie recipe is perfect for this Easter if you've been abstaining from meat for Lent. Even if you're not, it's a smashing ham pie! 3 types of meat + 3 types of cheese! Recipe below:
Ingredients:
Crust -
- 180g all-purpose flour
- 1/2tsp salt
- 77g cold unsalted butter, cubed
- 1 medium egg
- 3tbsp ice water (approximately)
Filling -
- 1 large sausage
- 100g spam
- 90g bacon/prosciutto
- 1/2 large red bell pepper
- 187g cottage cheese
- 100g mozzarella cheese
- 2 medium eggs
- 1/2tsp salt
- 150g frozen spinach
- 50g parmesan
- Salt and pepper to taste
Method:
1. In a food processor, mix together the flour, butter, egg and salt. Mix until the texture appears like sand.
2. Slowly drip in cold water and continue mixing until the dough starts coming together.
3. Put the dough out on a clean surface and push it together with your hands until it sticks together.
4. Cover it in plastic wrap and put it in the fridge while we get to the filling.
5. Chop up the sausage and spam into cubes.
6. Cut the bacon into small strips.
7. Fry the sausage, bacon and spam and then set aside.
8. Cut the red bell pepper into cubes.
9. Defrost the spinach (or use fresh spinach) and squeeze out the excess water. This is important otherwise the inside of the pie will be too wet.
10. Mix together the cottage cheese, mozzarella cheese, eggs, spam and salt.
11. Remove the dough from the fridge and roll into a thin sheet, enough to fill your baking tin with excess for the pie top.
12. Mold the dough sheet into your baking tin. The dough is very buttery so you shouldn't need to oil the tin.
13. Roll out the excess dough again into a thin sheet for the pie top.
14. Add the bacon on the bottom, followed by the cheese/spam mix, sausage, peppers and spinach. Sprinkle parmesan on top.
15. Cover with the dough sheet for the top. Pinch together and seal the edges.
16. Brush the top with egg wash and cut some holes on top for the steam to escape during baking.
17. Bake in an oven @ 200C for 45-60mins. The cheese will come bubbling through the top and that's fine.
18. Remove from the oven and let it cool in the tin for at least 2 hours.
19. When it's completely cooled, remove from the tin, cut and eat!

      Yes, you need to increase the butter as cocoa powder absorbs more moisture than flour.

    The achar can actually last for months in the fridge but never rinse the cucumber and carrots with water. The idea of adding salt is to remove the excess water and washing it will defeat this step. Just squeeze the cucumber with a cheese cloth and most of the salt will actually drain away with the cucumber juice.

      We can dry it under the sun as well right? I remember one of my aunts friend putting it into the washing machine to spin dry in a cheese cloth! lol! but thats because they do it for commercial purpose. The other recipe that i really miss a lot of the Green Chili pickle that's stuffed with young papaya and dried prawns.

      @@headhuntersjay sun drying is after squeezing out the excess water. Hardly anyone does that these days as dust and dirt will probabaly settle on the food with this method. I have made the stuffed green chilli pickles, hardly anyone makes them too these days. They are delicious.

      Regular full fat milk powder will do. Do not substitute powder with liquid, the texture will change.

    Wow, what a sad tasting cookie in no way is this even close to famous amos cookies.... Back in the 1980's Wally Amos was on the Oprah show and he gave a cookie recipe that is out of this world. Please try this one .... yeah requires lots of ingredients , but in the end WOW! start with the wet mixture first....... 227 grams melted butter, 1 cup white sugar, 1 cup brown sugar, 2 eggs, 1 teaspoon vanilla extract mix...then add 1 cup oatmeal, 1 cup crushed corn flakes, mix.... add 2 cups all purpose flour , 1 tsp. baking powder and 1 tsp baking soda mix... this is the base cookie dough then optional 1 cup chocolate chips, one cup of peacan nuts chopped or walnuts chopped, one cup shredded coconut, and 1 cup raisins..... to bake pre-heat oven 190 c for 14 to 16 minutes, for best results in baking so you don't burn cookies use a sheet of aluminum foil only place cookies dough on sheet then smash them down ... pick up sheet place in oven , use timer 14 to 16 minutes ... once timer goes off you can pick up sheet without burning yourself ... aluminum is not hot....

    Fyi, i only love and eat famous amos cookies. So tbh i was very skeptical on how it's going to turn out. But w e many good reviews, I finally came ard to baking this. The ingredients are simple & e recipe is easy. When it was done, the smell was very enticing so i couldn't wait & popped 1 into my mouth. mine was crunchy even tho it was still warm & OMG!!       Castor sugar is the best for baking these actually. You can use any chips you like, just adjust the sugar according to taste

      Hmm I think that's not such a good idea cuz it'll freeze the liquid in the dough. The point of resting the dough is so that the flour gets fully hydrated. But I've never tried it so you can always try!

      My cookies doesn’t appear to be as crispy even though I follow the 72 hours in the fridge. Any idea what could have gone wrong? Should I pop it in the oven immediately upon taking out from the fridge or should it be soften a little before putting it in the oven? I pop it in the oven immediately out from fridge and have to take approx 15-17 mins to bake to have it golden brown!

      @@rebeccachan2218 Shouldn't matter if it's straight from the fridge or not. We usually do it straight from the fridge. Maybe it's your oven temperature. Some ovens don't have accurate temperatures so you could try increasing the temp.

      Yes we have tried with Milo too. It makes it more chocolatey, not quite the same taste but it still tastes good! We prefer malt milk but definitely try it!
