This looks great! I usually don't measure when making royal icing either I just eyeball it and see. I've never tried adding glucose and now I will. I'm making cookie decorating kits for Christmas. Do I need tor refrigerate the royal icing? Or is it ok with room temp?
Hello from Malaysia. Would you recommend warming the egg whites over double boil method for a few minutes before proceeding to make the royal icing? Just to kill whatever bacteria that might be in there? Thank you
@@Elin-Esteem84 I get glucose at mom and pop style baking supply stores in the states. hope this helps. I had the same question about the difference between corn syrup and straight glucose Still researching
Did you use pasteurized egg whites for the icing or did you use them as is? I would like to know because I thought using raw eggs without heating it and killing bacteria would be unsafe.
I heard the bacteria is on the shell, not IN the egg. If you wash the shell before use, the chance for contamination is extremely low. I do in the same way for years now and never have a problem. But if you want to be super safe, just gently heat the whites above the steam. (Don’t overcook!)

Idk, but they may be pasteurized. If not I would heat them a little or add lemon juice to cancel the bacteria

Is that safe to use raw eggs though. Things have changed
Totally safe. Eggs are now pasteurized. Just can't use this method with fresh farm eggs.
