My all-time favorite is Osso Bucco ... the classic version with Veal shanks and Risotto Milanese as the side dish. I've been making this dish for the last 30 years without variation. One day, I might be tempted to try it with Beef shanks. Maybe. I liked that you added a garlic bulb before putting it in the oven. And I always add a slice of lemon rind at that time, which adds a subtle but noticeable flavor. This recipe takes a little time and preparation. It freezes well and tastes excellent when re-heated. I made osso bucco tonight, and I didn't think it was important to preboil the rind (like Julia Childs said). It was. The osso bucco was still really good, but the hint of bitterness detracted from the dish. :)
This does look tasty. I used to cook with wine often when I lived in Spain. I have never seen these beef shanks available but I will be looking out for them. Also I used to buy Oxtail when I lived in Spain but don't see them available either. I am excited to see what you are going to do with these beef shank pieces.

Looks good! I would wrap the thyme and Rosemary in cheesecloth and tie it with a string. It makes it easy to remove later and the petals from the Rosemary are contained. They can be kind of woody.

That looks mighty tasty. I cooked Osso Buco once, but they were pretty scrawny shanks. Those ones are gorgeous. Question - is that a 3 qt (2.84 l) dutch oven you cooked the meat in? I’m trying to decide if I buy a Lodge 3 quart or 4.5 quart. I just bought a 5.5 quart because it was really cheap but boy is it big! A 4.5 quart seems like it will still be pretty darn big and I already have the 5.5. So, if that’s a 3 quart, that’s a really dandy size and helped me make my decision. Thanks!

If you can find a local meat source, not a supermarket or chain store, like a farm market, you might be in luck. In SE PA, there are a number of local small farm/Amish/Mennonite meat retailers with these cuts.
In this recipe I used a 6.75 QT Dutch oven. As long as the meat is covered with the liquid you will be good so a 5.5 should work 😊 Thanks for watching and hope will try as it is a delicious meal.

You can substitute them with oxtail. It requires low and slow cooking much like shanks do.
