    Alex, let's do a series using canned corn. I travel all over the world and canned corn is the one item I can find in every grocery store. It's affordable, can be sweet or savory and lends itself to different textures. Would love to see what you do with it!

      Somebody needs to start stocking up on free condiments. 😉 pro tip/ poor person who is a foodie tip: They're at grocery stores, gas stations, grocery stores, coffee shops etc. There is no reason not to have free honey, sugar, mayo, ranch, blue cheese, catsup, mustard, buffalo sauce, relish, dijon mustard, horseradish sauce, fresh lemon wedges, olive oil, parmesean, red pepper flakes, saurkraut, pickles, onions, salt, pepper etc etc etc. Literally all of these i have a habbit of picking up whatever i am low on and shamelessly taking it with me. I have never had anyone say anything.

    I'm not sure that you will see this comment, but thank you so much! I'm right now in Kyiv and spend most of my day in s shelter. I don't have a luxury to spend much time in my kitchen and there aren't much produce on our shelves and in markets, so I decided to try chickpeas and your videos helped a lot ❤️🇺🇦 plus I love your attitude, your videos bring smile to my face ❤️

      I highly recommend a cookbook written by my Culinary Arts professor - she is Professor Timarree Hagenburger and the cookbook is "The Foodie Bar Way". It was written for people who don't know how to cook and just microwave and consume frozen food. Also good for people with well developed culinary prep skills. Very simple recipies and beautiful illustrations. Amazon has it. The blog "Mama Eats Plants" has fantastic easy recipies - also The Minimalist Baker has a blog that I highly recommend.

    Made two trays of meringues for a party last night that had many guests with dietary requirements. Some people took one to be polite I am sure, but then the whole giant stack disappeared from the food table. HUGE HIT! I spent ages answering questions about them. People couldn't believe they were Vegan - even the mini people thought they were aces. Thanks Alex, you continue to make people think I am amazing in the kitchen. T

    Oh my! That sandwich is now my all-time favorite sandwich in the world. I don’t add the turkey, as I found it really didn’t need it - for my tastes. If everyone else loves it, by all means enjoy it that way. But the chickpeas, avocado, caramelized onions, pickles, and more...just wow!! It’s easy enough to make for a quick meal, but it doesn’t work as a workday lunch. It gets soggy and loses that bright character, which is too bad. Keep cooking with chickpeas! They are one of my favorite ingredients, but they are often overlooked as bland. Thank you for my new sandwich obsession.

    I love this series! Chickpeas can be so much more than hummus or a salad garnish (like the classic, but little known, Sicilian panelle sandwich). Looking forward to parts 2 and 3 :)

    I wonder... could the chickpea juice replace the eggs in the pancake recipe, just as it does for meringue? I'm not even vegan, just curious. :)

      Marie Bach if you didn't want to use an egg, try chia seeds soaked in water or ground flax seeds mixed with water (about the same amount as one egg would be) :)

      Aquafaba works in recipes where there's enough flour. I make simple breakfast cookies with it and I swear nobody tastes the difference. Also, it makes the cookies nice and soft.
      I'm not even vegan but I love them.

    Those are the best looking onion bhaji / pakora/ pakoda I've seen (I've made tons over decades). Smart idea using chickpeas instead of besan (chickpea flour) because you'll get more texture and crunch, instead of the smoother pakoras

    You should have made an Indian Kadhi from chick pea or 'Besan'. It's like this deep rich flavourful Indian spice broth that is filled with either vegetables or with those onion pakodas you made in this recipe.

    Chickpea flour is amazing for coating fish cutlets (like cod)! So crispy and light.
    Or just had water and olive oil for traditional Italian flat bread.

    So i actually stopped eating canned foods because it’s not as fresh as (fresh foods) beans I will still by dry... but garbanzos are harder to cook and will now buy canned again! Along with sardines!! You’re so great thank you!! I could save money now!

    Hi Alex, Awesome recipes!!!! just a tip for your chickpea pancakes. You said it was harder to flip because the top is so runny. One of the ways you can get around that is to put a lid on the pan until you get ready to turn it. It will partially cook the top so that it is not runny when you flip them. You will also need less time on the other side because of this. Keep making video!!! Can't wait to see more!!

    Bhaji looks delicious. If you want try making Bajji, south Indian style, dip thinly sliced eggplants, onion slices, bell peppers or potato slices in chickpea batter you have made and deep fry! Two for one batter for making Bhaji and Bajji!! :)

    Thanks Alex. Always wondered what I could do with chick peas. I am gonna try these. The meringue looks fabulous and my husband loves turkey sandwiches. I think he will love that recipe a lot!

    I make the pancakes useing just water baking powder and vanilla, so good , very filling, vegan option.

    boiled chickpeas with just salt and cumin and hot pepper is my favorite snack in winter time. not boring at all.
