    I'm Italian and I come from a family of cooks/restaurant owners, good/healthy/fresh food has always been around so it always makes me sad to see people buy packed sandwiches, crisps and stuff like that on a daily basis (even if I like them myself!), or worst eating people say they rarely/never cook at home. Keep up the good work Alex!

    Awesome video. Recipe 4 was awesome. Most people love to complain about cost when it comes to food as the reason they buy processed but the real reason, and I think we all know it, is they don't want to waste time with food. Which is a shame really.

      Also, I would love to have had that much time and these kitchen facilities when I was working in an office! Many people would be lucky to have a microwave. I've worked in places that just had a kettle and a small fridge. I don't know anyone who could do this regularly unless they worked from home and didn't have children.

    This was very cool, but it seems like you missed the point of why people eat those awful lunches--- a lack of time, not money. This lunch does not solve that problem. I'd like to see you do something along these lines, but making everything ahead of time, or how to make different portable items, or how to make a weeks worth of lunches from one set of ingredients...

      From my point of view, I would tend to think that's it's not really the lack of time but rather the lack of time given to the activity of cooking. As long as people consider cooking as swappable with other activities, they will keep on skipping it. Cooking takes time, not a lot, but it does and therefore require to give up on some activities. I like Alex way of showing that cooking can bring exciting and good things in your life :-) I answer a year after your comment but I felt compelled!

      But if it was not lack of money then you would be able to order and pick up something much more healthy than what shown above. Of course I'm not saying person can't have lack of time and money. But I have to say that I agree with Monsieur de Bonobo on it being prioritization issue, rather than just lack of time. You can also get into a pretty severe downward spiral by eating unhealthy, lowering your energy levels and feeling like you have less and less of available time.

    Many more people need to know about this channel, your videos are always fun to watch, and super informative in a way that a lot of cooking channels are not.
    I am able to assimilate a lot more technique from you than typical cooking shows since you tend to explain some of the nuance and reasoning behind your decisions. I appreciate your approach and your energy.

    One awesome thing about the salad with the chicory is that, because it's a hardy leaf, dressing it before you run to lunch isn't going to make is a soggy, sad mess.

    Great lunch! If I was to pick a criticism (very hard to do), people buy that food because they don't have the time on their lunch breaks to cook. That and most people are too lazy or don't know how to cook beforehand. Still, we do so more power to us right Alex? :D

    This was a BRILLIANT video! I am going to a new school tomorrow and i want to bring food from home instead of buying because the food at my new school is quite expensive.       You might have reheated them in medium temperature water, and then put them on absorbing paper. The better, but taking more time, option would also be to let it defreeze gently outsight the fridge.

    It's good to see a cook choosing Peccorino Romano cheese over Parm. I love it's brighter, saltier flavor. It's such an independent contributor and elevates my dishes without losing itself in my food. Love! And you are wonderful at plating the food. It always looks exciting.

      Or they get lazy. I tend to fall into that category, and I get bored with the things I do make. It's like I get "stuck" in this cooking bubble, and haven't poked my out. I'm trying, though!

      when i hear people say they cannot cook, its like hearing somebody say they cannot count... it like... .the basics for survival and it comes naturally too... i mean i never learned cooking but i know what to do with the produce around me i may not be able to make a sophisticated meal (this is why youtube is a blessing and optional) but everybody knows what to do with an egg and a pan, or a packet of pasta and cheese etc. Therefore pre-made food is not a last resort but a choice, therefore it cannot be used as an excuse. Time is not an excuse either, even at fast food restaurants, I guarantee you that the time it takes to get there, possibly stand in line, place your order, pay, leave etc. will take longer than making an average generic meal familiar to the western hemisphere.

    In Japan vegetables are expensive T_T. I love eating vegetables so I spend a lot of money buying it. I can assure you that much vegetables in Japan can cost easily double the amount you spent T_T.

      jmiquelmb consuming a larger amount of seafood - of course, Japan is surrounded by the ocean lol but "low in meat"? - not really, come to Japan and see how much meat people consume in a day, Karage (fried chicken) and Katsu/chashu are super common and popular daily dishes on every table

      jmiquelmb Spain has a different agricultural background with a pretty abundant amount of veggie/fruit produce, unlike Japan, also for the Spanish diet you can see more vegetable dishes.

    Remember at the outdoor market, nothing stays after dark. Supermarkets have a 24 cycle when they can sell, the sellers at the market have maybe eight or ten. Anything they don't sell they have to take home and deal with somehow. Their best outcome is to sell everything, pack up only the crates, and go home and relax. If they take home food that isn't sold, it's more labor which yields no revenue. While the best produce is going to be found in the morning, the best deals are to be found closer to the end of the day. Everything is negotiable in the green market.

    You are a very talented guy. Been watching a ton of your videos. Most chefs can cook with good ingredients but not everyone can make something amazing of of random items - chickpeas/sardines etc. Also that music - love it. Xx

      No need for faking when we have our langage educational system ;) In France, if you don't spend time on your own trying to get the accent or the intonation, don't expect the teachers to learn you that xD We have the vocab and sometimes the grammar (for the most determined ones) but we still pronounce everything like we talk in french (i.e. like shit)

    Brilliant and super inspiring! We have a large permaculture garden so I have an easy access to first class seasonal veg and fruit I'll try to be a little more creative when it comes to lunch :-)
