In france, Belgium or Holland (main countries for excellent cheeses) you usually eat cheese with bread, not crackers. Preferably baguette. But when i came to the states to study in New York I found it very difficult to find good fresh bread.
I will put out: Kaltbach, Meule de Savoie, Beaufort, Appenzell, Reblochon and finally Cambozola Blue. I won't put out my L'Epoises because it would be way too much for any guest (but I love it!!) I will offer also, smoked and spiced almonds and dried mangos. YUM. Thanks for your video.
Oh my, that looks so delicious! Whether that is an "authentic French" assortment of cheeses or not, it surely suits my taste, and I truly appreciate seeing a cheeseboard with a bit of a difference. I am going to try several of these cheeses on an upcoming cheeseboard. Thank you for the inspiration!
Nice try, 8/10, One omission though, no cheeseboard in France should be without goat's cheese. Here in the Poitou Charentes many babies are weened on to it, which is good news for me as I make it.
We never eat raclette cheese as it is or on bread in France, we always associate it with potatoes and "charcuterie" (look it up) to create the dish that we simply call "raclette", a delicious winter meal
@Deb Harris no fondue is melted cheese you dip a small piece of bread in. Raclette (meaning scraping in french) is a cheese you heat on one side and scrap the melted cheese onto a plate. You usually eat it with potatoes, cured hams and a salad.

you don't know how to put up a cheese board, it's an american bonanza without regard for quality or flavor. if you can't have proper brie de meaux, just don't include fake brie in your assortment.

I get Isigny St Mere Brie an Costco BUT I always leave it at room temperature for 5-7 days to allow it to ripen. WOW!

Mimolette comes from nederland not a french cheese
