  • How to Make the Ultimate Cheese Platter, using 6 iconic French cheeses and many delicious World alternative cheeses. Live Tasting / Smelling session included !
To put together the best cheese plate, you must have diversity in milk types (cow, sheep, goat) also in texture : soft, creamy, crumbly, firm and of course in strength too, mild and gentle to naughty and deliciously stinky.
    COMTE CHEESE
    --------------------------
    strength : 2 out of 5
Its a pressed and cooked cheese made from Cows’milk
Produced in eastern France / moutains of the jura
    Alternatives :
    - Swiss Gruyère
    - Young british cheddar
    - in the us, i’ve found
    - Pleasant Ridge Reserve cheese, from UPLANDS CHEESE in wisconsin
    - Tarentaise cheese from Spring Brook Farm in Vermont
ROQUEFORT CHEESE (don’t spell the T)
    ----------------------------------
    strength : 5 out of 5
It’s an unpressed and uncooked cheese made from SHEEP's milk,
Comes from the SOUTH of France, more accurately from the AVEYRON region.
    ALTERNATIVES
Here are a few international alternatives to ROQUEFORT cheese :
    - ITALIAN Gorgonzola
    - British Blue STILTON
    - Danish blue cheese
    - or even the blue Maytag.
    OSSAU - IRATY
    -------------------------
    strength : 3 out of 5
Its a pressed and uncooked cheese made from Sheep’s milk
Coming from south-west France, in the pyrenees mountains.
    ALTERNATIVES
Here are a few international alternatives to OSSAU IRATY cheese :
    - Spanish Manchego is the first that comes to my mind
    - Young Italian Pecorino as well
    - From the us Gran Queso, in wiconsin.
    MOTHAIS GOAT CHEESE
    ----------------------------------------
    strength : 3 out of 5
SOFT-RIPENED cheese made with Goat’s milk, wrapped in a chestnut leaf,
Coming from western France, a region called POITOU
    ALTERNATIVES
Any creamy goat cheese would work, so :
    - Italian robiola di capra
    - Bonne Bouche cheese, in Vermont
    - or in California : Humboldt FOG from CYPRESS grove,
    EPOISSES CHEESE
    -------------------------------
    strength : 4 out of 5
Washed-rind Cheese made from cow’s milk, coming from Burgundy, in the center of France.
    ALTERNATIVES
so Here are a few international alternatives to EPOISSES cheese :
    - Ardrahan cheese from Ireland
    - German Limburger
    - British stinking bishop
    - Italian taleggio (g-i-o)
    CHAOURCE CHEESE
    --------------------------------
    strength : 3 out of 5
Soft-ripened cheese made from cow’s milk.
Coming northern east France, the CHampagne ardennes region.
Even if it has its own personality, in many aspects, it is similar to BRIE cheese, and that’s why I chose it.
    ALTERNATIVES
As BRIE cheese is produced all over the world, it is the perfect alternative to CHAOURCE CHEESE. Example :
    - Brie from King island dairy in Australia
    - Cornish Brie from the UK
    - or really, any Brie cheese in the US.

I'm a fellow Frenchman and I leave just around Paris, so I have the chance to be able to buy all these wonderful Cheeses (Because there's also an awesome Cheese shop right next to my place), and I have to admit that my American friends would go CRAZY for it! 😁😁
I've spent a lot of time in Florida for vacations on multiple occasions and I can tell you guys for sure that sadly, there aren't such tremendous cheeses like these over there.
Still, I was able to find some pretty decent Italian cheeses there.
But if like me, you're a "Cheese lover", you guys definitely need to plan a trip to France! And remember once there to ONLY buy from specialized Cheese shops and absolutely NOT from Supermarkets! This is mandatory if you want to experience THE genuine French' cheese experience! 😉😉

Just gotta say. I really appreciate you mentioning US cheese too. Most people in the US don't know what good cheese we have that's local. Also I'm from Wisconsin and had some Gran Queso a few weeks ago. Thanks a ton Alex!

    • @revylokesh1783
      @revylokesh1783 3 ปีที่แล้ว

Yeah. For a country as big as the US, there's bound to be a region that specializes in diary products. So you've got Wisconsin. And since the love for good cheese is universal, there *_must_* be some small local producers of high-quality cheese. The difficulty is just finding the right ones.

I went to France last summer and I ate Comte for the very first time and I was amazed but then I went and visited the tunels where they make the roquefort cheese and tased it for the very first time and boy was I in love. I brough home half a killo of chese that was ate not two weeks later. And nothing comes close to roquefort so take that gorgonzolla and place it on the cheese board because it is indeed delicious but it is not roquefort.

But I pretty well remember how exited Delphine was when she found some cheeses she knew and convienced us to try them, Comte was one of them. That's clearly when my cheese-addiction started :-) Since then i tried cheeses from all over the world and the sheer range of tastes is incredible. Mercie, for enrichen my knowledge again.

Actually Mexico had one of the best cheeses in the wolrd this year called Flor de queso. Also, Manchego and Oaxaca are probably the most known mexican cheeses and they're very good but also very fresh so it's not really strong. Anyways, cheese is beautiful no matter where it's from as long as it's properly made.

J'adore Comté ❤️ The only cheese of this type that I prefer is Beaufort. Comté is easy to find where I live in Devon, UK but Beaufort is much harder to get. I recently visited family in The Cotswolds and there was a French market of all things in the market place with a wonderfully knowledgeable French lady selling a massive range of incredible French cheeses. She had Beaufort, of course, and I got the biggest piece I could afford!

As someone living literally on the banks of the Rhine river (close to Colmar, but on the German side) I can say with confidence that there is no real alternative here to get on your bike, cross the river and get all those magnificent cheeses from your trusted fromagerie (or even supermarkets - they have a decent standard). And while your on the way, stop at your favourite boulangerie, get yourself some fresh baguette - and a nice croissant or pain au chocolat for the way home. Paradise can't be much better...
And even though some of my friends still tell horror stories from back in school when I opened my lunchbox on fieldtrips in a closed space (bus/train), I'll never say that Muenster has a bad smell. It's gorgeous (also: try it as a topping on your tarte flambée)!

As long as you don't call Emmental and Gruyere french, I'm cool! They are also protected cheeses and regions but french add French before their name and it's supposed to be ok. It is not! How would you feel about a Swiss Champagne...or Bordeaux? No way, right!
Anyway, about french cheeses, being a french speaking swiss bloke, I really like Roquefort and you, the french have plenty of amazing cheeses throughout your beautiful and vast country, no need to steal our swiss cheese, monsieur! Sorry, I had to add the punt! I'm really passionate about all cheeses and the amazing thing about cheese is that every country in the world must have amazing cheeses to be discovered! :)

For a bit more extravaganza, try "Boulette d'Avesnes", "Brie de Melun", "Brillat aux truffes" and "Gaperon".

One comment from a french, I'd say that a french plateau in France would rarely look like this. It's very hard to cut the cheeses here, it's very packed :)
Most french plateau would contain only cheese with maybe some jams or onion confit on the side + bread of course.
Nuts and crackers sound very anglosaxon.

mugensamurai I have found that people who treat high calorie foods (cheese, chocolate, desserts, alcohols like wine or beer, cured meats, etc) as an experience and indulgence instead of having the cheaper ones comsumes less, less often, and enjoy them more on the whole. Thus, it's often slim/fit people geeking out over food.

I selected Mothais, Ossau-Iraty, Langres made with milk from the cow, Bicaillou goat cheese, Roquefort, Manchego and P´tit Basque. The Manchego and P´tit Basque I always have in house. Unfortunately you can only get the pasteurised Manchego here in Luxembourg. If you never tried the Langres and Bicaillou you should give it a try.

I don't rate our Australian brie and camembert though. I thought they were fairly good but nothing amazing. I have tasted some Australian bries and camenbert cheeses - actually not that bad. Have tasted worse in the UK. Just check what level you have - if you love the good stuff get a level 5 brie. I once travelled on the train with a big wheel if it and the lady next to me nearly passed out from the smell🤣🤣.
