HALLELUJAH!!! At LAST, we have a use for that LAST BANANA that everybody keeps not eating and so it just sits there on the counter getting blacker & blacker until the fruit flies threaten a coup and you're forced to hump that banana all the way out to the curb so you don't have fruit flies in your kitchen trash! I nominate Chef John for the Nobel Prize in Foodies.
Just throw that banana in the freezer and make banana bread or smoothie whenever you like. The skin turns black in the freezer, but the inside is perfect. Bye bye fruit flies.
Made them this morning. Toasted the nuts first and added a bit more milk to get the right consistency. Served with fresh banana slices, maple syrup, and creme fraiche - along with a side of Farmland hickory smoked thick sliced bacon. Excellent!
I thoroughly enjoy watching and listening to Chef John as he cooks. His videos help me relax. I like his old school hip-hop/rap references! Chef John is “an around the way dude!”
The walnuts are a nice touch. I make this using gf flour and 1TBSP of psyllium husks and some extra water or milk to get to the same batter consistency
Love the walnut touch. Personnally I use a recipe for banana pancakes which is much simpler: -1 banana per person (preferably not too ripe) -1 egg per person Mix Add some flour to make the batter's consistency less liquid. (about a 1/8 cup of flour per person I think) Incorporate. No sugar (not needed since the banana is already sweet) And it's ready to be poured onto a medium-heat pan (greased pan to avoid having the pancakes stick) The pancakes come out less airy and more chewwy. You can add baking powder to the mix if you like your pancakes more fluffy, but personally I wouldn't. Feel free to pour sirup or spread some marmalade on the pancakes. Enjoy ^^
Moving from Florida to Vermont soon, and I'm taking your final words as a sign that I need to make these pancakes before the big 1,000 mile trip. Thanks, Chef John!
A great tip for the bananas: pop them in the freezer! They will turn a very nice even brown and they will basically become macerated! When you thaw them again they will be very soft and very sweet, concentrated and easy to puree 😁
Also would have added some amazing medicinal spices: Cinnamon, Nutmeg and Cloves. Served w some PB slightly diluted/whisked w a fork w some syrup, slightly warmed up for some added protein to help mitigate the sugar/carb spike. Yet another great recipe for the books, Chef John. Thanks... once again.
I make banana pancakes similar to this and I hadn't thought of the dark chocolate, which is a brilliant and will be happening soon in my kitchen. There are two things I do differently. I stir with a spoon or spatula, because I find it too easy to over-mix with a whisk. Also, after turning each pancake, I add a generous pat of butter and slide it around with the spatula after it softens up. Because; butter.
What I find awesome about this video is recently I made a batch of your chunky banana muffins and with the last of the mixture I made a single pancake out of it. It was delicious with butter and syrup. This reminds me a lot of that.

Last time I made banana bread muffins, I had a little batter left over that wasn't enough for a muffin, so I poured it into a pan over a low flame with the lid on until both sides browned. Worked pretty well, actually!
Looks amazing! I've been adding sliced bananas and walnuts to basic pancakes for years. People think I'm crazy, then they try them, and it's always a win! I've even gotten people who despise pancakes to try them, and they love them too!!!

They looked good, perfect colour. I like them with bacon. Bananas and bacon go very well together, as do bananas and pesto. So sometimes I loosen up some pesto to drizzle on top and have banana pancakes with bacon and pesto. Sounds odd to some but everyone I've made it for likes it.

Oh boy oh boy do those look good! This will be today's brunch for sure... maybe with a little bit of cinnamon in them? And for some weekend in winter, maybe a few frozen blueberries snuck in that batter. Really nice!
