Also, I have grown pretty confident in my vegan cooking. I learned from watching you to make adjustments when I don't have everything from a recipe. It saves me from wasting money like letting things go bad because I don't have everything I think I need.

I decided to go buy some mushrooms based on this video, thanks! It's been forever since I've bought them and I didn't even realize until you said so. I am trying to up my fruits and veggies since I've been leaning on the meat substitutes lately. Hoping to get some more nutrients based on these recommendations! I love tofu, and eat it several times per week. And kombucha (I wish I made my own because it's expensive.) I always have on hand some green chilies in a can. I need spicy dishes every week. I have a whole cabinet of hot sauces. Canned green chilies aren't that spicy if you can handle heat, so sometimes they need some fresh jalapenos or some stronger spices added into the dish as well. One thing I eat regularly is beets. Not every week, or every month, but I do throw them into my diet every now and then because it's kind of ridiculous how much of a superfood they are. At first I used to think they tasted bad, but now, it's like my body has tricked my taste buds into thinking they taste good because of how good it will feel afterward. I usually go for the raw produce you buy with the leaves attached, and those greens can go into salads or be cooked with onions. You can also buy them prepared, so you can either slice it up and eat as patties on a bed of arugula with balsamic dressing or honey mustard dressing with some nuts (any kind, really). Beets are also good in berry smoothies to hide the taste and give it a gorgeous color. Trust me, they will really make you feel amazing. You can eat them raw, cooked, pickled, roasted. They're a magical root vegetable.
I’ve been eating probiotics for years. I first ate kimchi when I was stationed in South Korea while in the army. Radish kimchi is my favorite, but I haven’t been able to find it here. So I eat cabbage kimchi. The Bubbie’s brand of sauerkraut is the best in my opinion. It has a clean, prickly taste. As I am not vegan, I eat plain full fat yogurt with fruit almost daily. I have tried plant based yogurt, and just don’t care about it much. Probiotics are so important for gut health. ❤

Depends, I shop at my local coop or asian market(don’t sleep on your local asian market, SUPER cheap tofu, mushrooms and fruit, etc) and get staples at Costco. I spend 150 a week.

I love lacinato kale ❤ I tend to do the GBOMBS diet - greens, beans, onions, mushrooms, berries and seeds (for those here that aren't familiar)
