The reason his hand is behind his back during this drill is to isolate the use of the glove hand during those two portions of the drills. He wasn't teaching basic set up; he was teaching a receiving drill to get better at the transfer to throw.

Your non-glove hand should actually go behind your foot. It puts less strain on the body and makes a more all-around comfortable stance
