I will add in the belachan into the boiling oil just 1 min before I off the fire after frying all the ingredients. Since you have a good non stick pan, no need to stir and stir all the time as it will not burn or stick onto the pan as I made with someone's recipe before. I stir every now and then only. I will cut the duan pandan into 2 as easier to remove it later. I have finished my Sambal sauce, will make your recipe soon. Thanks for sharing.

水浸干辣椒, 要研細的香料切小快過油的确又快又好, 沒水不怕四濺, 也縮短了時間, 油分離後15分鐘再補充油想法很妙. 油分離出來時, sambal 顏色轉紅棕, 很好看. 干辣椒真奇妙. 我會再加些芫荽籽, 孜然, 桂皮和殅香. 放烘過的爞糕也很重要. 做rendang , 再加入椰絲和椰醬新鮮牛腱慢燉.
