A good rule of thumb is to hold on to resources for three years. If you do not use them after that time, then give them away. Your teaching style will change over the years due to the needs of students that you will have. Just remember to take deep breaths and focus on what went well during each day at school. It’s SO GOOD to get rid of the clutter! I went through my filing cabinets as soon as I got into my new classroom this summer and it made me feel so much better. Personally, I think throwing away a lot of that old stuff helps you feel like the classroom is more “yours” if that makes sense. It’s not necessary to keep things around you know you won’t use! I am 100% with you on the paper clutter thing...well clutter in general stresses me out and paper clutter is at the top of the list. Good job for going through the old papers stuff and getting rid of what isn’t your style.
As your planning your first day of kinder... look up magic play doh and the little poem!! My kinders LOVE “magic play doh” and I do it the first day and it helps calm their nerves and is a good multi sensory activity!
Great work on that cleaning out that cabinet & organizing your office!! I’m sure that feels so good! Starting with a clean slate is not always easy, but it’s worth it in my opinion! I collected my own materials my first year and have been adding things to it over the past couple years. It makes a big difference when you like the materials that you’re using to teach! I’ve been keeping it all in binders and filing cabinets, and it has made life so much easier when I am planning! 😊

It's great to have more resources, but it looks like your was really well organized, so you are really lucky...both classrooms I went into were "hoarder" teachers with no organizational system at all...just stuff everywhere all over the room!
