➡️ *Primary fermentation* happens when the SCOBY (Symbiotic Culture of Bacteria and Yeast) is still in contact with the liquids - think water kefir and kombucha at this stage.
➡️ *Secondary fermentation* starts when the liquid is separated from the SCOBY. This is when the liquid goes into anaerobic vessels, ready to build up carbonation and take on new, exciting flavors! 🫧🍓🍍

what if a leaf of cabbage catches mold in a sauerkrsut or sny other bit of vegetable in a pickle
take it out, clean it up. learn to differentiate between molds and kahm yeast. if its blue mold, its likely the whole batch tastes like this and is spoiled. then you'll have to toss it. if its kahm yeast you can usually get away with cleaning it up and saving the rest

store it in a sealed (so no evaporation happens) jar with its own vinegar :)

I'm enjoying your teachings. At the tender young age if 70 I'm still learning everyday. Cooking is more of instinct, and baking is more science. Learning to fermint is a very interesting journey ! I made my very first Kefir these past two weeks and ordered a yogurt machine. What an amazing journey !

If I did open the jar (way back when I made it) to "burp it" (cause I thought it was neccessary, because I did it without having found your video first) and the jar is now standing in my shelf for maybe 2 years, closed, with wonderful looking honey garlic in it... and I haven't really dared to try one... would it be sensible to assume it is still usable? If I would have opened it to take some out for usage, I also would have the same issue, right? So it should be fine? 🤔🤔🤔

organic and washing is always a good idea. the yeasts stay on during the washing process... just make sure to leave on the skin

In wather kefir the sugar added will be transformed in alcohol in a small portion. With a double fermentation the alcohol increase and the taste too 🤗

While growing up in Africa, we made a fermented rice porridge which babies loved. We drank fermented corn as well. In my late 30s I moved to USA, which 3 years later I started getting constipation problems once a week, especially if I ate chicken, not sure why but I cut chicken out and back eating my fermented foods.

is milk kefir fermentation an aerobic or anaerobic process? As in, should you keep the jar covered with a lid or with a cotton towel?
Both aerobic, cover them with a cloth or kitchen paper tight with an elastic band 🤗

you can open and close a gazillion times and it still is good - the power of fermentation and acidifying!
How can urs is that thick..what is the ratio for the last feeding.. and after feeding should i wait at room temperatures first before i store it at the fridge. Thank you

Can I use an airlock or does it have to be an open top? I have an extra SCOBY and needed to put it in a jar.
if you want them to grow, its best aerobic. an airlock is aerobic - so I wouldnt use that for kombucha
I just fermented some plums I picked from a local tree. I love umi plum vinegar. But Im not sure of how to preserve them further. Any ideas? Btw I have no fridge.

@@dangusmomangus3003 Because I went off grid and do not have enough solar yet to have consistent refrigeration. So I use my skills and good pantry assortment to eat as well as possible. Fermenting is a good way of doing that.
