Very nice ! It’s fantastic the way you do it. I use aluminum to cover it and cook it on a fire pit out in the terrace AND I add I stick of cinnamon and a black cardamom clove and a bay leaf 😅

@ I learned from some old women in a village right outside Tangier. They cook their food in outside clay ovens and fire pits it’s the old world way of cooking and everything they use is beldi! I also use smin which is the fermented butter when I make cous cous and I grind a sweet red pepper when i cook the sauce with the meat to give the sauce a slightly sweet flavor . I think the traditional way is ok with” knorr “ but I make the bouillon myself with saffron and puréed meat and herbs so the sauce for the cous cous is very flavorful. I steam it the traditional way not 3 but 4 times and I use corn cous cous !😀

@ no unfortunately. I can’t get citizenship as I am not born in Morocco. I do have a carte sejour which is renewed every year and it allows me up to 10 years after a specific time. Only Moroccan born are citizens have citizenship at this time.

I don’t know what state you are from, but now that Morocco has been ranked #1 top cuisine in the world, it has gained a lot more popularity and notoriety for sure! Moroccan food has its flavors and wonderful dishes that actually not just taste amazing, the dishes in itself are visually appealing. There is a lot of artisan skill in how the food is plated and how it appeals to the eye. There is a lot of talent involved in making the dishes. While the recipes are not overwhelming to recreate, time and preparation is crucial to the outcome of the dish. I will tell you, it is easy to mess up something as easy as cous cous, I have tried Moroccan food in other parts of the country and world where the dishes were not prepared properly and only suited for the untrained palate🤣😜. To be able to prep and plate Moroccan dishes you must be skilled in cooking preparing and delivery . I believe the Moroccan cuisine has earned its merits ! Although I have many praises, there are dishes I find almost repulsive such as rafissa (spelling?) and foods like harsha and the sweet sugars that are largely consumed for breakfast are not my cup of tea🤕! Other than that, I never learned to make rafissa or had interest to as I will never make it 😂

How do you like living in Morocco ?
@ oh I didn’t see your question 🤣💯I like it quite a bit ! The weather, so if you like warmer climates it’s a great place to live. The other good thing is if you miss snow and rain, you can go to the mountain areas like Ifran , otherwise know as the Les Alps of Morocco where you can enjoy natural fresh cold air and ❄️ snow. Morocco has it all if you’re looking for diversity in scenic places like beaches, forests and mountains. Natural blooms of flowers and gorgeous palm trees are everywhere. The quality of food is probably at the top of most countries I have been to. The social environment is very relaxing so if you are in a hurry this will not be the place for impatience🤣. The people are friendly, although I noticed that I am observed quite a bit as a foreigner especially dressed like a westerner, if I wear more traditional clothing, I blend in quite nicely 😀. It’s been almost 10 years, and I think it’s one of the most beautiful places on earth 🌍 . 💯

Where do you get your olive oil. When my sister went to Morocco she brought back some olive oil and we have NEVER had anything even close to that wonderful taste.
I also bring mine from Morocco but the closest I found to the taste was southern Greek olive oil. From Crete for example !

Hi, I want to cook that for three of my best friends who are coming over on Saturday. I was wondering if preserved lemon can be added and how? Also, how about butternut squash?
Hey ! Butternut squash for sure. You can cook from the beginning because it takes time. Preserved lemons you can use a quarter. I would keep it whole or chop it into thin slices and spread it around and make sure it’s low enough that it’s submerged in the sauce 👍🏼

It should work with a small water kettle, if you have an additional water kettle to run in parallel !

It’s an amazing oil to eat but yet they use it mostly in cosmetics but originally Moroccans ate it for breakfast ! It got pricey for sure but still worth the money 😄

It's an oil that is produced only in Morocco mainly the Agadir and Essaouira regions. It's used for both esthetics and nutrition... It's taste is just wonderful

Gonna give this a try, i just can't find one here in the UK that will taste exactly like the one we get in our neighbourhood in Al azhar.. the ones i have found in the uk are either full of sugar or have too much fennel or rose etc.. but this just might be it.. vinager+lemon+garlic does sound about right.. hope this recipe is pointing me in the right direction 🫡
This will be a thicker version. Lot closure to the Tunisian version. Lots of flavor and no additives. You definitely can make it hotter but that sometimes defy the purpose. I need to make a more Moroccan version, more vinegary, more liquid but also equally tasty 😄 Let me know once you make it and let’s chat about how you like it !
this is a 10/10 recipe. easy, incredibly affordable and so delicious. i’m so surprised with the result. mine even got burned a bit (i cooked it in a dutch oven) but that added a smoky flavour you usually find in great restaurants. thank you!

Thank you ! The olive oil is so flavorful, you can eat directly or use it as a topping for other foods. On top of hummus or grilled vegetables…lots of choices 😄
