How to Make Moroccan Loubia: The Best One Pot Wonder

- Welcome to the channel! Today, I'm excited to share with you a traditional Moroccan recipe that's both hearty and delicious-Loubia, also known as poor people's caviar. This white bean stew is a staple in Moroccan cuisine, known for its rich flavors and simple ingredients. Perfect for a cozy dinner, this one-pot wonder will fill your kitchen with irresistible aromas.
We'll start by soaking 500 grams (or a pound) of white beans overnight to ensure they cook perfectly. Then, we'll walk you through the process of preparing our spices and other ingredients, including fresh garlic, onions, parsley, and cilantro.
To elevate the flavor of our stew, we'll be using a combination of cumin, turmeric, ginger, and sweet paprika, along with a good quality tomato puree. We'll also add bones for an extra depth of flavor-bone marrow and fat are far superior to any store-bought stock!
In our cooking demonstration, you'll see how to properly use a pressure cooker (or an Instant Pot) to achieve the perfect texture and consistency for your beans. If you don't have a pressure cooker, don't worry! You can also make this dish in a regular pot or Dutch oven, although it will take a bit longer.
After 35-40 minutes of cooking, we'll show you how to cool down the pressure cooker safely, add the final touches, and let your stew simmer to perfection. Serve your Loubia with fresh bread, a side of olives, and a dollop of harissa if you like it spicy.

Ingredients List:
500 grams (1 pound) white beans, soaked overnight
1.5 liters hot water for Soaking
900 ml for cooking
2.5 tsp salt
0.5 tsp black pepper
1.5 tsp turmeric
2 tsp cumin
1.5 tsp ginger
2 tsp sweet paprika
40 grams tomato paste
4 garlic cloves, crushed
4 tbsp mixed chopped parsley and cilantro
400 grams tomato puree
250 grams grated and drained onions
1 long red chili (optional)
Bones for added flavor (optional)
120 ml olive oil

Literally one of my favorite dishes growing up that I continue to make today. I swap out the tumeric with saffron and add some ras el hanout but unless you get it from Morocco, most mixes arent right. Thanks for sharing a piece of Morocco with the world. ❤

If using canned beans, what is the approximate cooking time? Thank you! This recipe looks amazing! 😋
@@Master_Petes_Theater canned beans are almost cooked, so I would say cook all the ingredients together first and then add the beans last. For the sauce, especially if you use bones also, would take around 20 minutes. Then I add the beans for another 15 minutes. But I would still check on them once in a while. No need for pressure cooker if you use canned beans. It will taste a bit different but still good !
