  • Two of my favorite things are the Ankarsrum Mixer and a delicious Toast Bread! The Ankarsrum Assistant is by far the nicest mixer I've ever used. It's made with high quality materials, has a 7qt bowl for large batches and is incredibly durable. But all that aside, baking with the Ankarsrum is fun and inspiring with recipe book that comes with it! The Toast Bread takes me back to my childhood, visiting my family in #Denmark, and eating the delicious #bread my Farmor would bring home from the bakery every morning. This Toast bread is kid-approved and will not disappoint!

    I also have an Ankarsrum but I find the bread recipes use too much yeast. You get so much more flavor into the bread by just reducing the yeast (can be 2-3% of the flour) and instead increase the time for the dough to rise. I like to do this overnight in the fridge. There is also a nice side effect of giving the dough more time to rest: the bread will be much better digestible because the FODMAPS are getting decomposed.

      Thanks so much for sharing! I haven’t tried reducing the yeast but I do lengthen the rise times. I’ll have to play around with the amount of yeast! ☺️

    Hello from Denmark, sesame and poppy seeds are used a lot as a kind of spice on bread here in Denmark. Sadly the last 30 years we have seen a lot of bakeries close. So today we only have 400 real bakeries left. A real bakery is a bakery and a shop. A little tip, when you beat the eggs put a little salt in, it will make the eggs more runny and easier to apply on your bread.

      Tak for det! I will definitely try adding a little salt next time. It’s so sad to hear the bakeries are closing. We see that in the US with so many independent shops closing and chain stores opening. 😔

      @@farmbreadI think that trend depends on where you are. In rural areas, that seems to be true. Urban Areas seem to have the opposite trend. Chain stores don’t seem to do as well in urban areas nowadays. Perhaps the rent and the size spaces that are available make them less attractive to chains.

      Congrats on your new Ank! How exciting! This is a great question. Aside from the cookbook that comes with it, I find a lot of information in user groups on Facebook. I also use recipes that I've been making for years and adapt them (if needed) with the Ank. I would suggest using the dough roller as you're getting started and putting the dough hook aside for now. I think what's most important is to reserve the last cup or two of flours and add them gradually so that you can get your consistency to where you want it to be. I made a more recent video about getting started with the Ank if you'd like to check that out as well. You may find it helpful. Thanks so much! Good luck!

    thanks for the video. Just got a new Ankarsrum and was little frustrated making a challah. This video was a great tutorial on how to properly use the machine to make a bread. Love that the kids participated too!

    Nice video, My Husband bought me an Ank a few weeks ago and I love it! You’re right about the learning curve. I’ve been using my kitchen aid for yrs and with some dough it bogs down. Yes it’s expensive and it is true you get what you pay for. The chocolate chip recipe on pg 41 is now a family favorite.

    Great video. Waiting for my mixer to arrive tomorrow. I have had 2 KitchenAid mixers fall apart with this type of dough. Can't wait to try it! Loved the addition of the kids and the dog getting a drink LOL

      @@louisleoncini1033 a most enthusiastic +1 but the Bosch is a good mixer (I have both). Still, two reasons off the top of my head to go with the Ank are the fantastic warranty and the fact that it ships complete--no need for the equivalent of a Baker's Pack.

    I got to get this! I enjoyed watching and learning. One comment, I saw the butter that was going on your delicious-looking bread and would suggest making culture butter, and you would love your creation even more. Just a thought.

    I've had my Ank for a year now. I've got some bread recipes that have been staples for me for 20 plus years, then I purchased my Ank. Those same beloved recipes were so much better with the Ank. The tecture of my breads improved so much. Also, it seams I don't need to use as much flour.

    I first discovered the Ankarsrum from watching Bruno Albouze. I thought it was an old antique mixer. After watching him use several times, and explaining features, i was hooked. Kitchen Aides are inferior along with many other brands. They cannot handle dough well and motors burn out.
    I finally purchased mine and literally cried when i was unboxing it. It took 3 years to decide if I wanted to spend $700. It is worth every cent! Beautiful design and sturdy. I learned a while back that Amazon has many knock off products. I didn't know this. I always went to them to save, and somehow discovered they have fakes. ie..Dewalt, and other major products. I go elsewhere for major purchases. Purchased my Ank from Pleasant Hill Grain,...Nebraska.

      Thank you so much! Yes, the Ankarsrum is so versatile! I actually made a two-tiered Norwegian cake yesterday, doubled the batch to make two cakes with a whipped cream topping from scratch and it handled it all beautifully! 💗

    This is one of the best bread making videos I’ve seen in a long time! You are obviously an experienced bread maker. I am wondering if you ever make the dough and then freeze part of it (like to make rolls or single loaves)? I would like to be able to batch cook dough and pull out only what I need.     My special man (boyfriend sounds funny at my age LOL) gave me the Ankarsrum as a Christmas gift.
    I’ve always made bread by hand with an antique recipe, so my learning curve has been slooow…first two sets of bread have come out dense and not fully risen. My usually successful Browned Butter Cookies came out flat. Ugh…
    So definitely a learning curve. 😜🤔

    p.s. my Step Grandfather was Danish, a baker by trade who came to America after WWII and was saddened by the fact he could find no “real bakeries” in California where he chose to settle. He was also an arborist and professional rose bush specialist, so focused on that for the time I knew him. What is funny is you mentioned bicycling in Denmark - he bicycled everywhere LOL. He’d always tell me it was good for the body to stay healthy. As was scrubbing the skin with a tile brush..LOL

    p.s. Redmond’s “Real Salt” is even more healthy than the Himalayan, which I used until I discovered the Redmond’s .
    (Traditional table salt is chemically altered and leaves no minerals, only chemical sodium and chloride, the latter a known carcinogen)🧂

      He did actually, 🤣 sooo…
      He then bought me a WonderMill and 4 types of organic wheat berries, and asked if I’d make more bread, and and and…
      He then went on a “Home-milled organic bread and water (with a little raw milk) Fast for 15 days and lost 5lbs. and said he didn’t feel hungry! He looks much better, skin looks better, hair less greasy in the mornings.
      He then immediately followed his “Bread Test Fast” with a lemon water Fast for 5 days and lost 10!
      So he’s now at his “When I met him healthy weight” LOL
      He’s now in love with home milled and home made bread.
      p.s. I didn’t even get to open my own Christmas gift he was so excited about the Ank mixer! I was NOT happy he opened the box and let him know! 😤 He was like a kid in a candy store. I told him I’m sure he bought the Ank for himself, not me LOL

      Due to our crazy altitude of 7500’ and no consistency in flour mixture - 50/50 mix of hard red and hard white, I ended up adding a Tablespoon of Lecithin and 1/4 cup Gluten powder/flour, with a potato water mash.
      It seems to be doing the trick! 🥵🙏🏼

      I'm so happy you're figuring out a solution, that sounds tricky! I'm not much help here, but I did reach out and a fellow bread maker recommended the book "Pie In the Sky". She said it's the best high altitude book. Tells you how to adjust recipes and gives you great advice. I'm not sure if you've seen it but wanted to pass this along! :)

      Seldom see a sale, consider how much money you will save each month not buying bread, cookies, ect.more luck finding flours on sale. Christmas is a long way away ! And if you do it your new enthusiasm will get you experimenting, next xmas you may think you really don't need it. Homemade breads and goodies are appreated more than money spent on unneeded gifts and bread and soup for ailing friends and family, or thank u gifts or baking with family or friends, kids are time well spent. And the money you save goes to the coolest breadmaker around! The history of it is worth looking up, there is even a museum

    I have my grandmother's old kitchen aid mixer. It has don't good by me over the years, but it has always been a bit small for me. In researching, I immediately had interest in the ankarsrum mixer. Love your videos on this. Thank you so much as it is bringing me closer to making an investment in this mixer. 😊 Also, where do u get your special bread flour? Thanks again.

      My favorite organic bread flour is through Central Milling. It’s unfortunately expensive to ship now so I’ve been trying to find more local mills on the east coast such as Lindley Mills and also Janie’s Mill. I listed them in order of preference. There’s also Azure Standard which has a good bread flour and special milling process that doesn’t remove any part of the wheat berry, but in turn has more of a whole wheat flavor so it’s a trade off. Janie’s mill is similar in that it tastes more like a whole wheat flour. Hope that’s helpful! ☺️

    Recently got an Ank and enjoyed watching your video. Is there a reason a 'window pane' test was not done? That's what I'm used to when making bread to determine if it is ready for its first rise.

      Thank you so much! Yes I’m pretty sure you can use loaf pans if you prefer that. Given how they rise while baking it’s not necessary but I think it would work fine if you prefer a standard loaf shape. ☺️

    I recently purchased the ankarsrum and was wondering does your machine get warm while kneading? Because mine does and I was wondering if that's normal with the mixer. Thanks x

      Hi! I believe mine does warm up a bit at the base, but not hot or too concerning. If yours is feeling hot I would recommend contacting customer service. Hope that helps!

    I got my Ank today and have been playing with it. Tried the toasted bread recipe and ended up with sticky dough climbing up to the top of the blade and being flung out of the bowl over the counter top and floor. Exciting, but messy. Since you say it takes a week to get used to it, I hope my technique improves....

      Thanks so much for sharing! Yes there’s definitely a bit of a learning curve, you are not alone! What I’ve found works well is that once you notice your dough is starting to reach the top of the roller, move the wand and roller about an inch or two to the center away from the edge. The dough is getting squished between the roller and the bowl and that’s why it moves upwards. When you reposition the wand, it allows the dough to stay together without getting too squished.

    Hi. I very much enjoyed your video and I also just splurged and bought Ank the Tank after my KitchenAid died during my last pizza dough endeavour. I would like to try this recipe. What size pan did you use to fit the 4 loaves?

      It went well today. My first loaves of bread ever. I halved the recipe as 4 loaves is too much for us. My first milk and yeast mixture did not bloom so I suspect either my dry yeast was expired (although the package indicated it was not) or my milk had cooled down too much. I brought the milk up to the right temp but I suspect it cooled off too much once I put it in the Ank and added the yeast. I bloomed the next batch directly in the saucepan once the milk got to temp and it worked fine. My loaves are certainly not as nice and cylindrical as yours but pretty good first attempt. It will come with practice. Thanks for you guidance.

      @@pierredesloges7421 Excellent! They don’t need to look perfect, just taste good! ☺️ I usually freeze three loaves and keep one out to enjoy. I double bag in the freezer. They freeze well! Also, my yeast doesn’t bloom as well either with this recipe, and I have read from others that this happens to them as well. I’m not exactly sure why, but the important thing is that it still works , so don’t discard the yeast mixture if it doesn’t look right, just go ahead and use it and I’m pretty confident it will work fine!

    Can you use it for heavier whole grain sourdough recipes? For health reasons we eat whole grain sourdough.

      Great question! I don’t see why not. I fresh mill wheat into whole wheat flour and use that for my whole wheat and honey loaf, and use the Ank to make a batch of 3 at once. However,
      I don’t use the mixer as much for sourdough recipes as I do for yeasted loaves. I hope that’s helpful!

    Have you used fresh milled flour for this recipe? Soft white berries or hard soft? Would it change the process listed in the ankarshrum book?

      Hi! Great question. I haven’t used FMF for this recipe but I have used different bread flours that are a superfine ground whole wheat. My kids and my preference is definitely an even ratio or greater of the typical sifted bread flour. We prefer the flavor, but the texture is still very similar.
      If you were to try FMF I would recommend hard white or hard red. Pay close attention to the dough mixture when adding your final cup of flour so that you have a good gauge on how much or little to add. Other than the amount of flour, using FMF really shouldn’t change the process much. I hope this helps! Thank you so much!

    I hear its a fantastic mixer but at that price thats a minimum expectation . I may yet get one but right now the difference in product between what Ankarsrum and my Bosch Mixer can produce are not near as separated as the cost of each .

      I would say wait until either your Bosch has seen its final days or you feel it’s just not giving you the result you desire. The Ank is wonderful but definitely an investment.

    What amount of flour in a recipe is the max for using the roll instead of the dough hook?

      Great question! I’ll start out by saying I don’t really know the answer but based on my experience, I don’t go past 1600g using the roller. I haven’t tried a larger batch than that with the hook, but I’ve read from others that they’ll use the hook for larger batches. I hope that helps! Thank you!!

    Do you mix sourdough in this as well? I make only old grains like red fife, spelt, Kamut and einkorn. I can’t eat modern wheat. Do you think this would over mix them? I usually do stretch and folds over about 4 hours so wondering if something like this would save me some time.

      That’s a really good question. I haven’t tried sourdough throughout the bulk rise. I usually will use the mixer for the initial mixing of ingredients and then finish the rest by hand.
      I don’t think you’d get the same results but I’m curious, I can definitely try it out to see.
      Do you buy organic wheat berries or flours? You might find better success with regular spring and winter berries if they’re organic. Or organic flour. Just a thought!

      @@farmbread i use organic berries but I can’t tolerate modern wheat so I use red fife (an old Canadian version of wheat with lower gluten), spelt, kamut, einkorn and emmer. I do make wheat bread for my grandkids but my main reason to look at this machine is to be able to make my own bread with less time. Thanks for replying. I appreciate it.

      You’re very welcome! What lucky grandkids. ☺️ I don’t think the Ank would reduce the overall time in the process, but it could help reduce hand kneading durations. So that it’s more of a passive time versus hands on in the process if that makes sense.

      @@farmbread yes that makes sense. My process right now is to mix the bread one loaf at a time and then let it sit an hour. Then I do stretch and folds every hour 3 or 4 times until I get a good windowpane before I shape the loaves and put them in the fridge over night. I am thinking the machine would let me do the kneading of 3 or 4 loaves at once and then just bulk ferment for a few hours before shaping. That could save me time. It’s an expensive investment here in Canada so I’m asking lots of questions and watching lots of videos to make up my mind. I really appreciate your help with this.

      I completely understand, it's definitely a large investment. As I haven't personally used it the way you're inquiring about, I reached out in one of my Ankarsrum groups on FB. Below are my question and the response I received: Q - Has anyone used their Ank to mix and knead ancient grains for sourdough before the bulk ferment? And could you possibly replace the need to stretch and fold through the kneading process of the Ank? Goal being to save time. A: "Yes. I've replaced the hand process with the Ank. I soak the FMF [fresh milled flour] in the bowl and about 2 hours later add the starter. I mix that for about 4 minutes and rest for about 30 before adding the salt and a little more water...and then mix again. From there, right into BF...I usually try to get one or two folds in...or better yet a lamination." He also mentioned he positions the dial speed between 2 and 3 o'clock. I hope this is helpful for you! I will try to do a test with the grains I have on hand (Kamut and spelt) at some point soon, but this is much faster for the time being! :) I would also add that the Ank is very versatile, so if you do any other baking besides bread you can most certainly use it for cakes, cookies, whipped creams etc....

    Love my Ank went through 2 kitchen AIDS was going to buy the Bosch it was less money the boche now is 500 w not 800w.The Ank is almost twice the money but you what you pay for ❤❤❤❤.

    Are you concerned with the chirping belt noise that you mixer makes after you turn it on? Mine did not do this for the first month after I bought it, but now it makes that noise.

      Yes I do! I mill my wheat, rye, semolina and corn flours. For my regular sourdough I usually buy an organic bread flour so that I don’t have to sift the germ out. Do you mill as well? ☺️

    The dough roller is not supposed to move back & forth like it's doing in this video. It's supposed to be locked in and only moved manually.

      The roller is meant to squeeze the dough gently between it and the bowl whilst being able to swing into the centre to accommodate any lumps of dough. Perfect kneeding occurs when a donut forms and whizzes around. When time is up and the gluten has formed, dough consistency can be slightly adjusted if necessary.

      In this video it shows that the roller can be MANUALLY moved to the center. It is not supposed to move on its own.

    I've been making bread with this mixer for 20+ years. I don't think you're supposed to be putting your hands or tools into the mixer while it's running. When I bought my mixer the manufacturer recommended using the dough hook for recipes calling for over 6 cups of flour. I use the dough hook for my typical batch of bread that makes 5 loaves of whole wheat bread. Best wishes.

    Fabulous review....im a complete novice...but so tempted...wonder if its an investment for a single person though??....im just tierd of terrible store bought bread,thats like cardboad,and full of chemical....has anyone else bought this for a one person household?

      Awww thank you so much! I can totally relate with your reasons for wanting to make your own bread!! What I would say is that most if not every loaf I make freezes well. You could make batches and freeze all but one loaf at a time. You could also make one loaf at a time and freeze half of it.
      Would you use the mixer for anything else other than breads? If not, it may be more practical to buy something more economical as you’re getting started with bread making until you’re in a good groove and ready to make the investment. When I first started I was using an inexpensive mixer off Amazon that worked decently until I began making frequent large batches.

      I'm a single person. I have an Ankarsrum. One of my cousins is also single and she has an Ankarsrum. We're something of an Ankarsrum family. 🙂 Be aware that you can definitely make small recipes in the stainless bowl.

    It's really not a matter of intuition, it's a matter of whether or not your dough is forming a doughnut. Also, your mixer's arm shouldn't be rocking while it's kneading.
