I made this once following your recipe. It was a big hit with my family. This time I'm making it for our Christmas get together. On a side note: I melt about 1/2 a stick of butter and mix it with 3/4 cups of warm honey. Once I cut my cornbread, I just pour all that honey buttery goodness right on top, spread it out with my spatula, and let it all soak in. Girl, talk about good eats! Did your leftovers hold up okay or would you recommend eating it right away to avoid the cornbread getting mushy? @@thehomemakingexchange So far, there have never been any leftovers. I don't make a lot so I can avoid that issue. But I don't think the cornbread will be get mushy or anything. And it should heat up nicely in the microwave. Thank you for responding. God Bless!! ❤❤
I haven't tried it, but I think it would work if you have canned sweet potatoes with no sugar added. You can drain them & mash them up for the recipe. The ones canned in syrup might be too sweet. If you have those, you could try reducing the amount of sugar in the recipe a little. I hope it works out well if you try it!🙏🏽
