Cherry Strudel Recipe | Češnjev Štrudelj (SLOVENIAN RECIPE)
Episode 70: This is my Mama’s recipe for her authentic Slovenian Cherry Strudel. Mama's homemade dough stretches out so thin, you will feel like a professional baker. Plus, this delicious cherry filling will have your tastebuds doing the polka. Dober tek!!

Cherry Filling
1 + 1/2 pounds frozen pitted sour cherries ( or 2 pounds fresh, pitted)
• 1 cup granulated white sugar
• 1/4 cup corn starch
• 1/2 lemon, zested (optional)
• 4 ounces butter, melted
• 1/2 cup bread crumbs or graham crumbs (I love using graham crumbs)
• pinch of salt
• 1 -2 packages of vanilla sugar (Dr Oetker)
1. Place cherries into a bowl and add sugar. Toss. Set aside and allow to sit for about 30 minutes. After 30 minutes drain the cherries and reserve the juice for later. Set drained cherries aside.
2. In a small bowl add 1/2 cup of cherry juice with 1/4 cup of cornstarch. Mix until well combined and smooth. Set aside.
3. Place remaining juice and pinch of salt into a saucepan and bring it to a boil. Lower the heat down to a medium-low temperature and slowly whisk in the cornstarch-cherry juice mixture. Pour in a steady continuous motion. Keep mixing and stirring until you reach a slow boil and the mixture turns into a nice consistency. Remove from heat. Pour over the pitted cherries. Mix all together until well combined. Set aside.
4. Stretch out homemade strudel dough (Strudel dough recipe below). Using a pastry brush drizzle on the melted butter. Next, sprinkle on bread crumbs or graham crumbs. Add cherries over the crumbs. If you are adding the lemon zest you would do this now. Lastly, sprinkle the vanilla sugar on top. Roll up the dough.
5. Bake in a 350 degree oven for about 45 minutes.
*if baking from frozen: Bake in a 375 degree oven for 45 minutes.
6. Sprinkle the top with icing sugar. Serve. Dober tek!

4. Add 2 Tablespoon’s of oil to a bowl. Place dough ball into the bowl, roll the dough around in the oil. Cover with clear plastic wrap. Let dough rest on the counter for 2 hours.

How would it dry in an airtight container? Wouldn't That seal in all the moisture? A large paper clamshell (aka takeout container) or cheesecloth/papertowel in paper bag would probably be better.. But what do i know..

My parents (dad is 94 mom is 87) are both Slovenian from Ljubljana and Maribor who emigrated to America in 1955 (myself and 2 brothers were born here in the US).Your recipe is almost exactly like mom still makes to this day, with the only exceptions being she'll sometimes add potato and then some flour to thicken up the sauce. Excellent!

This is a lot different than my Gramma taught me to make them. We do use sour cabbage heads and the meat rice mixture is about the same. We don't however make a soup to cook them in. We actually use either condensed tomato soup or tomato sauce/juice, layer the rolls in a pan and bake them. I would like to try yours to compare though.

Yummy! Thank you for sharing. I use to have Biroldo when i was small growing up with my family. The small Italian delicatessen would always have them and we would buy a whole rope. We would slice it thick and eat it cold with Fontina cheese and italian rustic baguette. ❤

Measure by using the baking sheet or pan that you’re using to bake it in. Than use the edge side of a kitchen small plate to cut the strudel roll to the length you need it to be to go in the baking pan. Or alternatively you can squeeze the strudel using your fingers, where you need to cut it. Keep squeezing it until it separates. Pinch and tuck ends under. Hope this helps answer your question. My mother achieved the perfect crispy crust. Is one of the reasons because she put oil in the bottom of the baking dish? She would coil the large strudel in a baking dish instead of a flat tray. Thank you ❤@@SlovenianKitchenbyMichelle
