Meet the Locals: Santa Barbara Fish Market
Meet the crew at Santa Barbara Fish Market - bridging the gap between local fishermen and fish lovers for over 25 years!
It seems like there would have already been a “Santa Barbara Fish Market” in the harbor before a then high school-aged Brian Colgate started one… right?! Well, there wasn’t. But now it is a staple of the waterfront here in Santa Barbara, and the fishermen and residents of Santa Barbara are better off as a result.
The fish that comes into Santa Barbara is from mostly 1-3 day boat fishing operations, and has unique characteristics and quality as a result. From a groundfish perspective, Southern California black cod just isn’t quite the size they’re looking for over in Asian markets, where much of the larger fish caught up north end up. So it’s up to people like Paul and Brian to figure out a way to make this size of fish every bit as desirable as their larger counterparts up north, and we’d say they’re doing a damn good job.

    Fresh lingcod is much better than fresh halibut in my opinion. If it's frozen, I'd take the halibut, if it's fresh, gimme the lingcod every time.

      Lol I've caught allot of lings in my day I've seen green white blue and a tiny of orange in there meat all same species of fish.....lingcod

      Lucky you - you got a blue Lingcod. About 10-20% of Lingcod naturally have a blue hue and blue meat (which cooks up white). But rest assured the lingcod in our video was as real of a lingcod as your blue one. Glad you enjoyed it!

    Unfortunately many people shop for fish by price, not quality because they can’t afford it. When we are able to make our local seafood cost the same as imported fish, then we will see the swift change in consumer preference. Commercial fishing by Asian and Scandinavian nations that pillage the ocean needs to be stopped. Not only is it taking away jobs from local fisherman, but their impacts on various marine ecosystems is devastating + unsustainable

    How long can salmon last in the freezer if I catch it and freeze it according to this method?

      Hi good question. To extend freezer shelf life you want to push as much air out as possible to prevent oxidation and avoid any excess water to prevent freezer burn. If you do it really well, the fish will be fine for about a year. If you want to one better than this you'd vacuum-seal it and get 2 years out of it. The OSU Seafood Lab in Astoria is currently conducting freezing shelf-life tests (-18C, vacuum-sealed) and they said that even at the 2-year mark consumers can't really tell and don't rate it any lower in taste/texture etc. With this low-tech ziplock method, you'll get less time, but it absolutely works too.

    Just cooked some lingcod like this for the first time and it turned out so delicious. The flesh was tender and it had such a good flavour. It truly allowed for the flavour of the fish to be first and foremost. Thanks for all the tips chef 🙌🏼

    The fisheries collapsed up and down the coast. I went to Vancouver Island a few years ago. The limits were very strict. Like one rockfish per day. Good to hear that with careful management, the fish can make a comeback.
