Tried Ilse once last winter. There's just so many really top tier roasters out there that unless they really wow me on the first purchase (I think 3 bags) then I just don't have the time or money to give a second chance. And my recollection was not good enough to give them another try. I find it easier to just stay with top tier roasters even if I pay a bit more, in the long run that to me is a better value.
You're right, there really are so many but where we might be a little different is if we see potential or find something unique/interesting about a roaster. We're certainly in a unique position but you're reasoning is very in-line with how we'd approach trying out new roasters before the channel
Hey, Good Life had a Diedrich IR12. They changed to a Probat P25 or are going to change any day now.
Oh wow, that's very interesting. In our last Good Life video, someone had mentioned they were switching from the Diedrich but didn't know what they were switching to. Very interesting they went with a probat, not a lot of roasters go that direction these days. Should definitely make it worth revisiting in the future. Appreciate the info, cheers ☕️
Whoa their prices are pretty steep 😕. Good coffee in general has really gotten pretty crazy in the last 2 years
You make an interesting point. Think we've actually seen several increases over the years. Mid 2010s you saw Onyx and Sweet Bloom at around $14-$16 for 12oz/340g bags. Early 2020s you still had Manhattan/a lot of European at around $20 for 8.8oz/250g bags. It's a great thing if the producers are getting more for their efforts as they deserve it for all that they do. At the end of the day though, it's up to the consumers as to what they're willing to spend. Have seen some very interesting coffees sit on websites because the price was too high. Hopefully we can find the ideal balance one day
So sad I missed out on the subtance airworks release 😢 gotta wait for the next group buy
There will definitely be more but the downside is that the final review we have is the coffee that Airworks released as part of their drop so that's a little rough
Great review. I like this coffee a lot and really enjoy it with the Substance recipe on V60. I just froze remaining coffee at 32 days.

This is one of my favorite coffee of the year 😉, I really like the balance between sweetness/intensity and clarity . For the floral note, for me it reminds me a bit like violet
Agreed on the intensity/sweetness and clarity, really appreciated the balance it offered. Can certainly see that violet not as well, another component usually associated with natural Ethiopians. Appreciate the feedback, cheers ☕️

@gilbert2303 you're right that the focus on single origins so it's been a very long time since we've had any blends. Know some people have suggested it as a possible Coffee of the Month theme, so possibly in the future. Cheers ☕️
Had a pretty similar experience with this coffee. Heard there was some bag variance with this one, with some people reporting harsh/more developed cups. For me, this coffee peaked before all the other coffees from gout and then fell off quicker than the other ones. Was definitely enjoyable for a bit, but not my favorite gesha this year
There's always going to be extremely high expectations with a coffee like this, feel like that probably played a role for a lot of people. Even then, very nice at its best. Cheers ☕️

For me ....where Blind Tiger is roast wise....is going to be the ideal roast going forward with so many coffees

Absolutely, welcome. September is one of the best in the world, Subtext has been great and Luna/Hatch are regular standbys for a lot of people. Canada is actually in the best shape it has ever been for local roasters
Have you tried detour coffee and pilot coffee?
Have a bit of familiarity with Pilot but none with Detour. Pilot is a slight bit more developed than I usually prefer, but they've had some decent offerings in the past

@gilbert2303 people often associate developed with the idea of being "darker." Guessing you're in the Ontario area based off the roasters you're asking about. Not sure what the local Whole Foods carry, but they do have local roasters so they might have Subtext (but kinda doubt it). The ones in BC carry stuff like the 49th Parallel so it's possible that they do, just don't know what they carry
I subscribed to their coffee because of your previous reviews, and I canceled the subscription after the changes, including the prices for the 250g bags
That's good to know. It is interesting how much of a positive first impression we'd had of them and how that generally changed the more we tried them. Nearly every coffee roaster changes a bit over time and it ends up being just being down to preference if people like the shift
The new colorful design of the kilo bags is so good for me though. I think that was an upgrade. And I have enjoyed their ethiopian coffees this year.
Which is good, they seem to still remain quite popular. A local multi-roaster said that they'd had positive experiences working with them and their new packaging was selling, so it's nice to hear it working out for them/you. Cheers ☕️
I found a coffee farmer in Puerto Rico, a small farm with a very interesting coffee offering. The owner roasts the coffee too. The name is Hacienda Encanto Natural. Just ordered natural gesha and it reminded me of a gesha from Mexico called Finca Las Nieves.
That is interesting. Would have fit very well with a couple recent Coffee of the Month ideas that we have had (non-traditional gesha origins and producer roasters). We'll keep this in mind should those things come up again as it definitely sounds interesting

the buncho was pretty funky in some brews, but not always. Had some really enjoyable brews too. But yeah overall the mystery was a much more interesting coffee

Yes, Airworks will be carrying them this month for a special release. It's coming up this Friday and it's pretty limited so keep an eye on that. If you miss it, Airworks should be bringing them back again in the future as well.

Funny timing! This is an Instagram post from them one week ago: "This week was the last week for our Diedrich IR12 roaster. We've been roasting all our coffees with this beauty for the last 10 years. It has served us well, never let us down and worked like dream. From tomorrow onwards we will have a new machine to work with. We will post more on this a bit later. What do you think our next machine will be?!" I actually started my coffee hobby by tasting one of their coffees at a festival. Excited to see how the new roaster changes things.
Oh wow, that is funny timing. Glad we got to try it before the change because we'll at least have a small idea of how their coffees were before the change. Pretty curious to see what direction they'll go. A lot of European roasters have made transitions recently, so this should be interesting to say the least....
Hey julian im just getting into pourover coffee and loving your videos! What do you think of thermal shock and honey processing compared to other methods?
Really glad to hear you're enjoying them and hope you enjoy your coffee adventures Thermal shock is something we could discuss in great depth. We do have a review of one of Diego's coffees coming up that should be interesting. Short response, if done well, they can be very interesting, but they often can go horribly wrong 😅 Honey processed coffees are also an interesting subject. During the 2010s, they acted so similar to washed coffees that it hardly influenced our perception of its processing. More recently, they mirror a lot natural coffees in terms of heaviness and lack of clarity. It seems like we're cycling through a rather tricky phase and we're seeing more processed coffees return to their intense but clean sense, and honey processed coffees should also reflect that as well

While they're up and coming in the Nordic coffee scene, I think it hasn't quite translated to the American market yet. Yet to see any of the big North American multi-roasters carry them. Seems like we might be at the start of that changing. Cheers ☕️

This one ended up being one of my favorite coffees of the year as I had a similar experience to you with the Nordic roast. I prefer sweetness and spice notes in coffee so the brews I got with that and the nice clarity one this one really got me excited about this coffee roaster. Very much enjoying the gesha village honey from MM as well, cheers

Had a sample of this and at the bloom it gave off a strong roasty aroma that also ended up in the cup itself. Strong smoke/roast upfront that overwhelmed the cup. I wasn’t impressed but my sample size is way too small.
That is pretty wild (also, you get your hands on a lot of samples 🤔)

My experience with this one was largely in line with yours. It was a bit heavier/ darker fruit forward than my general preferences, but I figured it would be. My earlier cups were better, and I'm wondering if I would've opened it earlier if I would've been able to get more out of it. It wasn't all I hoped for, but i wasn't very disappointed either.
Sounds extremely familiar to our own experiences. Interesting note on when to open the bag, actually think it might be the opposite. Recently brewed the natural Ethiopia we'd reviewed from them earlier this year and it was better. A lot of that heaviness dissipated a bit. Either way, appreciate the feedback as always, cheers ☕️

Hey Nikola, thanks for the question. It's a tricky answer as it's based off taste, honestly. The water we start with is already very soft by most standards (around 30-35 TDS) and it's essentially quality control to make sure the water is tasting the way it's supposed to. Simplest answer is changing out the filter and tasting the water regularly. There have been a handful of instances where it is noticeable that something is off (as we've documented in several reviews) knowing that we need to tinker with it in some capacity. It's imperfect, but we've had better results with it than when we were mixing on our own.
@ thanks for getting back to me. What filter do you use? I currently use a brita and using just basic test strips, I get a GH around 60 and a KH that seems to be below 40. Coffee seems to be brewing well but there are some coffees that I can’t get much out of, so it makes me wonder if it’s the water.
I see, interestingly, it's just the same. A Brita filter and the occasional test strip (though it has been a while). It could certainly be your water. If you're going super soft on your water too, it happens. Have found some super light coffees don't react well to extremely soft water
@ that’s good to hear that you’re getting great results with a brita. I’ve had too many naturally processed Ethiopian coffees and the occasional washed process that end up be very muted. Generally they taste like what the average person thinks a cup of coffee would taste like (making me think they aren’t over/under extracted) but also so lifeless.
I have a very very pressing serious question. Why are my pour overs with like a 12 to 13g dose are fabulous but when I try to go up to 16to 17g it's just not as good. I have tried grinding a bit coarser on the larger dose. No luck. Any thoughts?
Interesting question. Funny enough, often feel it's the other way around for us. 20/21g usually turns out better than 13g brews. That being said, we do have two distinct recipes for both (though they're under the same general settings) so it's hard to tell from here

Ever since I've heard of tomato like aspects form Kenyan coffee's I really tasted them as they cooled off. Is there a variety from Kenya that you don't taste that or all varieties inherently that way? I was thinking of trying some of the isolated varieties from Coffea circulor. Thanks
The Kenyan gesha didn't have that for us, but it's not quite a Kenyan varietal. Interestingly, it's a lot less common when you process the coffees more too (natural/more experimental processing). Coffea Circulor is probably the roaster that deviates the most from the Kenyan norm as it is a very unique project they've been working on. A lot of their washed coffee will still have a slight bit of it, but it's usually a bit more prominent in the SL28/SL34 varietals
Early on I thought that there was a unique tartness to it, cranberry made sense, and first impression was some herbality to it. I did prefer this to the other Kenyan that was available through Airworks, but neither blew my socks off.
Appreciate the feedback on it. Seems you might also be a bit picky with your Kenyan coffees but it's tricky. There are a lot that fall into this sort of category where you're just looking for just a little more
I was pleasantly surprised to see you review this one as it was one of the three bags of coffee that I received in their singles going steady 3 pack. I brewed it using a hybrid method through the switch. It was very sweet and citrus forward similar to what you got from it. I also got that intense stone fruit sweetness which really reminded me of a lovely white peach soda that I had in Tokyo. This and their Testing 2 yeast inoculated/washed have been two of my absolute favourites from this year! I'll have to make sure I try some more from them, and perhaps get myself a mug.

Sadly we're unaware of any roasters in the world currently offering a Kenyan gesha. It's still so exceedingly rare that this is the only one we've ever seen available for purchase

@@ricard3851@CoffeeReviews Wonderstate and Counter Culture in the USA have sold Gesha from Kenya before (I think, from Kamavindi Estate). April in the EU are working with Kamavindi, so I would look out for an offering of Gesha from then in the future sometime.

@CoffeeReviews fwiw, I've heard that this green was carried by a few different importers in Asia. I don't remember seeing it from any roasters, but I know it was available. I think Sey was the only NA roaster that carried it. Lately I've noticed a few different offerings from them that have only been available in Asia (Los Cenizos is another example)
Had a couple sips of this at a meetup and thought it was pretty good but nothing mindblowing. Obviously my sample size + environment affected my thoughts.
Which was a lot of the feedback we'd been hearing early on for this one (and some of the days we highlighted in this review). When it clicked though, it was spectacular. I'm sure we'll see it again in the future, and I'm sure it'll be even better
