#80 Gluten-free Torta all'ananas con Amasake / Gluten-free Pineapple cake with Amasake

Oggi vi presento una mia video ricetta per torta all’ananas senza glutine con amasake.
Gli ingredienti sono questi (6 pezzi)
Per impasto
30g di tofu schiacciato
10g di zucchero di canna
15g di amasake
Un pizzico di sale
30g di olio di cocco senza profumo
60g di farina di riso
30g di farina di mandorla
Mezzo cucchiaino di lievito per dolce
Per preparare l'amasake guardate la mia video ricetta no.79

Ripieno
200g di ananas congelato
40-50g di zucchero di canna
10g di farina di riso
Procedimento
1Taglio l’ananas congelato a piccoli pezzi.
2 Li trasferisco in una pentola e aggiungo lo zucchero di canna e il sale, poi mescolo bene.
3 Accendo il fuoco e lo porto a bollore. Dopodiché abbasso il fuoco e lo cuocio per 15 minuti sempre mescolando.
4 Quando la consistenza diventa cremosa aggiungo la farina di riso e la mescolo bene, poi lo cuocio per 1-2 minuti.
5 Il tempo trascorso, spengo il fuoco e trasferisco il composto su un foglio di pellicola alimentare. Cerco di dargli una forma quadrata e lo avvolgo.
6 Lo metto in freezer finche’ la consistenza non sarà solida.
7 Preparo l’imposto. Metto tutti gli ingredienti per l’impasto in un contenitore. Li mescolo bene. Inizialmente usando un tarocco, poi con le mani.
8 Quando l’impasto non e’ più appiccicoso lo trasferisco su un piano di lavoro e contenuto ad impastare fino ad ottenere la consistenza omogenea.
9 Lo metto in un sacchetto di plastica e lo lascio riposare in frigo per 15 minuti.
10 Il tempo trascorso lo estraggo dal frigo e lo divido in 6 pezzi quadrati.
11 Estraggo anche il ripieno dal freezer e lo divido in 6 pezzi quadrati.
12 Prendo un pezzo di impasto e metto tra due foglie di pellicola alimentare. Lo stendo a forma quadrata e sottile con un matterello, poi elimino solo il foglio di pellicola superiore. Metto un pezzo di ripieno al centro dell’impasto e lo chiudo. Ripeto lo stesso procedimento per gli altri 5 pezzi.
13 Li allineo in una teglia e li cuocio in forno a 180 ℃ per 10 minuti,
dopodiché abbasso a 170℃ e li cuocio per altri 15 minuti.
Potete servirli su un piatto.

    Ho fatto aka miso per tanti anni, facendomi mandare il kojikin dal giappone. Prima ci vogliono due giorni per fare il koji, poi il terzo giorno si fa quello che vediamo nel tuo video, naturalmente con proporzioni differenti essendo koji fresco e non secco. Lo facevo con soia, ma anche con i ceci. Nel 2014 ne feci 60 kg. E ho ancora l'ultimo vasetto, ormai diventato scurissimo e di sapore simile al hatcho miso. Buonissimo il temae miso; niente a che vedere con quello che vendono.❤ Gasshō🙏

      Nell'italia del nord il clima si presta alla fermentazione del miso: l'inverno è sufficientemente freddo per non avere molti lieviti nell'aria e riuscire a fare il miso, mentre in estate lo si tiene in cantine che non sueperano temperature elevate. Ma tu quindi non sei in italia? Complimenti per il tuo italiano!

      Yes, we eat sometimes the nori like a snack but most of the time it's used for folding together the food as you thought. The important thing is using crispy nori is the best anytime.

      I understand that you are a little skeptic using spam. Off course you can substitute with the bistecca! The most commonly used oil in Japan is canola oil, then sesami, corn and others.

      Usually Japanese people eat this dish in korean restaurant. Mine is a little bit japanized by my ground mother who used to live in korea. Japanese summer is very humid, still hot in october.

      Thank you! Japanese people are bit strange. We eat hot dishes in summer time in air-conditioned rooms but we don't eat cold dishes in winter time.

      Thanks for your comment. I said that Kakigori is often confused with Sicilian Granita but the procedure is different so the texture is more crispy. ("croccante" in italian)

      I understand your meaning! I just filmed how to make strawberry daifuku which is made with a kind of mochi in home. This is a Japanese sweet but you can eat the dough also with soy sauce. I will try to edit it in English!

    Mi piacevano i mochi, e li prendevo già fatti in un supermercato, fino a poco tempo fa. Però ora non posso mangiarli più. Non perchè non posso fisicamente, ma per altri motivi.

    A proposito di fagioli; ho scoperto che esistono fagioli neri. L'ho visto qui: th-cam.com/video/yZmlZhbuGEk/w-d-xo.html All'inizio pensavo fossero olive, invece sono fagioli. 😓

      @@kawaiiicooking Credo che con gli italiani funzioni un pò tutto, come ricette di cucina. Tranne le cose come la pizza con l'ananas e il cucinare insetti(che non mi sembra il tuo caso), penso che le tue ricette piacciano; soprattutto ai più giovani piace il genere vegano.

      Ahhhh! Mi dispiace.... Mangiare Hot pot con le persone vicine e' una delle cose piu' belle, pero' si mangia bene anche da solo! Io l'ho mangiato tante volte anche da sola!

      Yes, I used an Italian pasta machine. If I frankly say usually Japanese people buy packed noodles which is already done. It is much easier, but some people make home made one with an Italian machine or by hand In this case noodles become thicker. Thanks for your question!

    Wow mi piacerebbe assaggiare...questi ingredienti nn sono facili a trovarli...ma comunque perché gli udon hanno colore e consistenza diversa della pasta italiana...sempre farina e l'acqua...lo sapevo che si usa kansui a fare la pasta giaponese o sbaglio

      Grazie per aver guardato la mia video ricetta! La radice di loto congelata si trova anche in Italia, ma la bardana, non l'ho mai vista. Il kansui viene usato per le noodles di Ramen, ma l'udon e' molto piu' semplice anche perche' e' piu' tradizionale.

      La causa potrebbe essere il timing di aggiungere lo zucchero. Hai messo lo zucchero solo dopo quando i fagioli azuki sono diventati cotti bene morbidi? Se prima non vengono mai morbidi. Fammi sapere.

      @@cantrait7311 Yes, Soak the beans over a night after you rinse them, then boil them about for one hour untile they gets soft enough to be mushed.

      Capisco. Anche se Il riso è un ingrediente in comune tra Il Giappone e l'Italia il modo di cucinare è diverso quindi spesso è facile fare degli errori. Per noi giapponesi non è facile tenere la giusta cottura sul "Risotto italiano" perche' siamo troppo abituati di preparare il riso giapponese. A volte l'abitudine diventa un ostacolo.
