Last of the limas; last of everything! 10-12-24
We have had a gorgeous week of perfect October weather--the farmers have been busy all week with the corn and soybean harvests. As for the garden, well, with freezing temps on tap for next week, there was no reason to keep the peppers and lima beans. So they are all pulled up--we will have another bit of bonfire once they've dried and the weather is suitable for burning. Stan said we are cutting way back on next year's garden--we simply don't need to plant so much anymore! Maybe use up all the produce I put up this year first. Thank you for following along with me this year!

9-17 update: These were so good that I canned 9 more quarts yesterday! I used all Golden Delicious this time and they held their shape perfectly. When it was mid-August, I sincerely thought I was finished with canning for the season. The first peach tree was OK, but look at this gorgeous Starking Delicious! Some of the prettiest peaches we've had! And check out how much the field corn has grown since last weekend. This has never happened before. Years ago, we had sweet corn knocked over by a family of raccoons, but we've never had this particular kind of damage. This is potato week! They are yielding great so far but we are up against a very rainy forecast so we may have to dig them a bit sooner than we'd planned. This is super early, btw, to be digging potatoes! The forecast is for 2 inches of rain early this week; the Yukon Gold potatoes are in fairly damp soil already. Update 6-29-24 A Rain Changer!

What a change a week can make! We've had almost 2.5 inches of rain and (except for today) cooler temperatures. No more watering! So thankful! Because of the early heat, the garden is 2 weeks ahead of time at least. The potato vines are dying so far, yielding quite well. I've picked about 6 tomatoes, several jumbo jalapenos and banana peppers. And quite a few meals of green beans. And the sweet ...

It is officially summer and it feels like it! Picked our first meal of green beans, a few small tomatoes, a few small zucchini, and well, we need to dig the red potatoes, probably. We planted a new row of green beans and we are in full swing of watering peach and apple trees. The real heatwave (mid-upper 90's) starts on Monday, June 17. No rain in sight, either. I've never used a steam canner. Sauce looks great. I don't mind it if it isn't too hot. Getting LOTS of rain and now wind here.
Steam Canner is so much easier than water bath! Same timing. This sauce is quite mild--I was looking up recipes for glazed chicken thighs with Thai chili sauce! We also had wind...I always pray through those storms that our roof will not lose shingles and our trees won't fall! All is quiet this morning with no big branches down. Praying for those folks in TN and NC...
@@heresmyindianagardenandkit5003 Me too! I have family in GA that were in its path. They're ok but got 15" of rain and they were rescuing people in boats not far from them.
@@debyrah oh, my! So thankful they were not only OK, but were able to rescue others. Hard to believe getting that much rain...
I ruined a batch of jam using the Amish grocery pectin. I didn't know you needed much more. This sauce looks good, but we don't do heat very well. How do you like your steam canner? I LOVE mine!! In fact, I donated my old open kettle canner.
I'd never go back to a water-bath canner! I agree 100% not to use Amish grocery pectin for jam or jelly! I stick to the little boxes of SureJell or Mrs. Wages! But it worked fine for this.
Did you waterbath
Water bath for 20 minutes would work the same. I steam-bath for 20 minutes, which is the same as water bath, but uses much less water. I have a steam canner (not the same as my pressure canner). Thanks for asking.

Do you eat them as dessert w/ice cream or just as a side to a meal?
Well, I've never actually canned them this way before with cinnamon and brown sugar. Stan just eats them cold as a snack like we do peaches.. I'm thinking on pancakes with my homemade greek yogurt. Kind of like spiced applesauce.

I put my apples in lemon juice water and rinsed and strained them before adding them to the dough, and it still curdled. But it turned out just fine! I did muffins and a loaf pan in my toaster oven
Another toaster oven success! And now we know...curdling is not fatal! So glad you tried it, Ethan!
my pepper keep flowering but still no fruit so ill have to just keep waiting thanks so much for sharing its only my second year gardening
That's a puzzler! Are your plants healthy? I looked it up--could be lack of pollinators, too much/too little sun, not the right fertilizer (too much nitrogen?) That is so disappointing to have flowers but not fruit! I hope you can figure out what happened--maybe ask a local nursery expert! Oh--I just noticed that you are a new subscriber! Thank you so much!

I'm making an apple cake tomorrow! Rada knives are the best! love mine. And I have that same tupperware pitcher. Actually own a couple of them. I inherited mom's when she passed. Use them all the time for EVERYTHING!

thanks for this video. i have a lot of not so perfect looking peaches and was wondering if they can still be made into jam if I just cut the bad part out.
As long as they taste good, it should turn out! I made a batch of peach butter yesterday--very easy but I still prefer the taste of jam! Hope it turns out for you.🙂

We mix the tomatoes, although for marinara sauce, I only use paste tomatoes. Excited to have different varieties. I think those fat ones at the row end are the Picus. Wouldn't look magical if Stan didn't constantly maintain it with hoeing and watering! 😄 Hope your new place feels like home now!
Hot here too.🥵 My tomato and pepper plants are in pots and the tomato looked like it shot up a foot overnight. They both have blooms and I'm watering. Praying they make it! That's amazing on the frozen peaches! I thought I was good with some from 2020.
😅And then I just saw that at Mount Vernon they found cherries and berries preserved from the 1700's !! Thankful we don't have to pay for city water and that we have air conditioning!
Very nice! I'm not a big fan of cherries but i will eat them in pie. I think I liked them better as a child. Wish I'd known the coconut oil trick years ago!

How ingenious!! I'll bet that paper clip works better than those expensive cherry pitters. And thanks for the tip about coconut oil. I always use butter and have never been quite ok with that. Beautiful jam!!
I didn't want to buy a pack of hairpins just to use one or two! And so I prayed about it and paperclip popped into my head. I have plenty of them from my teaching days! liquid coconut oil is the way to go--it won't solidify in the fridge.
Everything looks healthy! We've had a TON of rain. Tomatoes and peppers are doing ok, but my flowers are in 'wait n see' mode🥺
Well, if it were later in the season, those tomatoes would need to be sprayed with calcium with that much rain! They should grow like crazy with today's heat! Which flowers are water-logged? Pansies? Petunias?

I think it’s safe to say there are now 102 uses for duct tape 😆 I’m watching this Wednesday evening so I’m hoping it held up well and you avoided the overspray 🙏
I'll update after the field has been sprayed--if I remember! If the weather is calm, no worries and Stan dismantles the fence! Our old duct tape was much better than the new Duck brand tape we bought today...

I've made rhubarb strawberry and rhubarb cherry jam, but never plain rhubarb--my rhubarb isn't very red so it needs the other fruit for color! and thanks!

No snow here, but had to cover things for several nights. I bought a small indoor grow light this year and love it! My peppers have their true leaves forming up. Cabbage, lettuce and basil are all up too!

I'm ready for some color! I've got lettuce sown in the raised bed, seeds in pots on the window sill, not sure if my chives made it through the winter, jury is still out on that one.
What kind of lettuce do you plant? I've had the best luck with Green Ice and Lola--not so good with romaine types.
