I made this version last summer . It was really good and so much simpler to made than breading , and frying . Really good !!! This is how Ill make this from now on . I also cut it into serving portions and froze them . After they were just frozen. I used my food saver and packaged them. Ive been enjoying this since last summer !
Very much in the way I have had it in Italy. Now remember with dishes like this there are variations and you will find it breaded in places in Italy also. But to me this is the most flavorful and delicious to highlight the main star - the eggplant. And easier too.

I know this is an old vid but this is perfect for Keto. I love eggplant and eggplant parm; right after we get through Christmas, we're making this. You can put in semi-cooked zucchini strips too to get more veggies in there. Leftovers, if you have any, can be made into eggplant parm sandwiches! YUM!!!!
@@CookingwithPina I did make it and tonight I made it again, except my eggplants turned out to be rotten inside (looked good on the outside but so many vegs these days seem to be like that) so I put in cabbage and mushrooms since I hadn't planned on substituting so didn't buy anything as a replacement at the market. I also tend to either cook some ground beef to put in (I need the protein or I get hungry in the middle of the night) or meatballs. It is delicious, we like it better than the fried method, plus those who are keeping to Keto can eat it. Big thanks. YUM!

i make this with the layered sliced baked eggplants and the sauce with ground lamb mint leaves tomatoes onions layered and topped with feta cheese when it comes out of the oven !
Made this yesterday and it was sooooo good! I changed it a bit, forgot to buy mozzarella (yeah..I know....) so I put a bit of low fat cottage cheese in. And I had a lot of fresh spinach that had to be used, so I threw some in too. I made the marinara from scratch too and even had some of my pesto in the fridge. That was perfect! I just made this tonight. My first time having eggplant parmesan. I didn't think I would like eggplant but this was good. I didn't layer mine like in this video so I guess it was more of a bake than an eggplant parmesan but it was very tasty.
I did take an extra step when making this. Before I put it in the oven i salted it on both sides top draw out some of that bitter liquid for about 20 minutes, then I rinsed the discs before baking them. However 3 minutes was not enough time to brown them, more like 10 to 15 minutes but I didn't do that. 5 minutes tops.

I made this the way she explained and I put the 3 type of cheeses I had on hand and it came out so delicious.
