    The fact that I genuinely care about this video gives me a strong indication my decision to "Look around for some reviews before buying a pen" has gone *way too far*.

    Loved the day with you! My Dutch-born wife and I were in Leiden in 2012, visiting an aunt of hers who lives in Hugo de Vriesstraat. We loved stopping at Voor af en Toe on the Botermarkt for a coffee. It was a fun visit and we enjoyed exploring Leiden's city centre.

    Interesting... Nice to see more of your town. I've been watching your videos for years and never knew you lived in Leiden. An old friend of my ex-husband became a Dutch citizen and lives in Leiden. Next time we visit I'll give your workplace a nod and a smile. (yes, my ex and I are still close). Lovely singing too.

    I think this is a worthy project, Dr. Brown..would love to see more of this kind of thing. Personally, I'd love to know more about Leiden; seems like a progressive, walkable place..rich in culture. Are there others madly writing away at great thoughts into rivers of Noodler's whatever, onto reams of amazing paper, drinking you-can't-believe-how-good-it-is coffee, eating things perhaps unpronounceable by Americans, crumbly, sweet or maybe savory?
    Thank you for your efforts.

    Very enjoyable. "Suicide Nets" ..great name for a band. With all that walking, you could be a Pokemon Go Pro. If you hold the camera up more even with your face, the bright sky above you won't darken your face as much. (unless that's the effect you are going for). Cool city!

    Thanks! It was nice to get a snapshot of the world you live in, and know you have a life outside of the world of fountain pens. If you like that type of Chinese clever (as I do) you might want to check out a Japanese Hocho. It is the same concept but a little smaller. It is my favourite blade.

    Wow, I really enjoyed this! I try to walk after work and on my lunch break and as much as possible on the weekends. It's just a good way to clear out your brain and get rid of any stress that you might have. Woohoo, vertigo on the stairwell shots! And you have a nice singing voice! In the States we call the sauce that comes with fish "tarter sauce" and it's usually just mayonnaise with sweet pickles in it - sounds revolting, I know, but it's not bad. I like it on hushpuppies myself (little cornbread type balls that are served with fried fish) Love the image of the churches and the power windmills...here in the STates people get so possessive of their views that we fight to have wind power, but I think they're rather elegant and amazing feats of engingeering. I hope you'll keep vlogging - tell Azizah I said hi :)

    I really appreciate your plug for walking. Sadly, in the U.S. walking is not an option for many -- and seldom used. I make it a point to log ~ 8 miles/day during the work week (more on weekends). The benefits are bountiful! BTW, jealous of your life in the Netherlands.

    That view of the canal in the city was cool, and looked like a perfect scene for a water color or oil painting. Well, except for the cars; they looked really out place, like they were parked on the side walk. I'd love to live somewhere like that where I didn't need an automobile, as the costs can be so high.

    Mr. Brown shows us a REAL knife made for slicing! Looks brand new still, no gleam near the edge indicating you've put it to a stone yet. Just barely enough "rock" in the blade edge to work on a very flat board. Nice "drawing" technique pulling those slices of meat off the hunk. The knife won't do for faster slicing on an end-grain block of softer wood, like they use in China ... at least not yet. You'll need to rub the blade on a stone to get more "rock" into the edge, and perhaps lift those corners a bit or your blade will "catch" if you slice more rapidly. Let's see a vid of you doing the "side slice" technique, with "flying fingers" ... preferably not completely separated from the palm ... :)

    • @sbrebrown
      @sbrebrown  8 ปีที่แล้ว +1

      I remember you mentioned your use of a Chinese chef's knife on my potato soup video - and that was actually a reason for me to pick one up! I have not yet sharpened this one, but I'll probably have to do so soon. I see why you like this type of knife so much: it's super convenient for picking up product to throw it in a pan, and I really love how it allows you to slice super thinly. So, thanks for the suggestion, Chef!

    • @frankieweisse9089
      @frankieweisse9089 8 ปีที่แล้ว

      Right. Very easy to move product around w/o having to set the knife down. Next, find a good sharpening stone. Every knife deserves a good stone to keep it in shape. New Chinese knives are usually too "squared off", and not really sharp yet. Japanese stones are the best, imho. Water stones, not oilstones. Lots of info about using them online. Knock off the sharp corners at the nose and heell of the blade, and give it a little "rock". "Rock" it, dude!

    Stephen, I hear all the time how the paper in the US is cheap and the paper in Europe and other places is higher quality. I think this would be a great question for your next consult the doctor video. That is because it is intertwined with another question, what is the prevalence of fountain pens in Europe, because presumably only with a fountain pen do you benefit from high quality paper. So delve into that subject matter as deep as you'd like, but basically how common are fountain pens and high quality paper in your neck of the woods?
